it is definitely still good. the use by date means it has to be cooked by todays date, once it is cooked, it should be good at least for another 36 hours. As long, as it hasnt changed color and dosent smell rancid, its fine..... I have been a restaurant / bar mgr for 20 years, believe me, we have never gotton anyone sick!!!

When I have hamburger that has gotten a little old I cook it as loose meat- keep stirring it and breaking it up in the pan so there are no pink areas. Then I use it in a casserole- mix it with chopped onions green peppers and celery, cream of mushroom soup, cooked spaghetti and shredded cheddar cheese, bake it in a pan with buttered breadcrumbs on the top until it's heated through and the cheese melts. It's a nice traditional church supper hot dish.

I believe the date is the "sell by" date and not the "use by" date.(at least on the meat that I buy in local markets) The USDA errors on the side of caution so unless it has not been stored properly you should be fine using it today.

Yes, but cook it well done, at least 160 degrees internal temp. to kill any bacteria, to be on the safe side.
