Do you mean the casing? It is not plastic, and is edible.
If you mean the plastic that holds them in the package, no, don't eat that.

it is the casing and they do make bratwurst and other meats without the casings because there are a lot of people that don't like them. They can be really tough sometimes. But they are totally edible!

yeah, the casing is edible- go ahead and it it. Grill the brats first to get some brown coloring and then simmer on low in some beer and onions for a while-yum!
