There's a recipe I got from epicurious.com for Scottish Farmhouse Eggs. You just take a casserole or souffle dish, tear up enough bread to cover the bottom, put in a layer of shredded cheddar, crack 6 eggs over it, another layer of torn bread, and more cheese. Pour a cup of half and half or cream over it, add some cayenne, and bake at 350 for about 40 minutes.

I absolutely love that dish and make it about only twice a year.

Crumble bulk breakfast sausage in a heavy skillet. Add: chopped onion, bell pepper (any color), tomato, mushrooms, basically any veggies that you want.
Cook until sausage is all the way done and drain any excess grease.
In a bowl beat 5 eggs.
Add cooked sausage and veggie mixture and a handful of any cheese you prefer.
Butter a glass pie plate and pour egg/sausage/veggie mixture into the plate. Bake at 350 for 40 mn.

or else

Beat 6 eggs in a bowl add 1 1/2 cups of half and half or milk and a dash of salt.
In a separate bowl melt 1 stick of butter, 1 cup or brown sugar and 1 T. cinnamon.
Spread half butter mixture into a 9x13 pan.
Put 6 slices of bread into pan. Pour the rest of the butter mixture on top of bread and put 6 more slices of bread on top of the mixture.
Pour egg mixture over top layer of bread.
Bake at 350 for 30-45 min.
Sprinkle w/powdered sugar

Devilled eggs-but use jalepeno relish or chopped jalepenos instead of pickle relish, and add crisp chopped bacon, mayo, sour cream, dijon mustard, little salt and pepper

and my personal favorite which I crave about once or twice a year:
chili and eggs.
(my homemade chili or canned chili if i don't have any and eggs scrambled with cheese).

I can tell you what my DH made me for breakfast this morning....He made a batch of hot tamales last night. It was too late for me to eat one...This morning he got up and made me scrambled eggs with bits of tamale chopped up in them..It was one of the most delicious ways I have ever had eggs....I put a spoon full of Salsa on top. It was great,,,not something you would do every morning,,and since it was Saturday,,,I slept late,,so more brunch than Breakfast,,,but I would certainly love to have these again,,anytime....
You can buy tamales in a can or buy them various places, where Southwestern food is sold....worth the time....

He bought him a Tamale maker machine and took up making these as a way to kill the time and give him something to do, to help him quit smoking,,,turned out to be one of his better ideas....he is now over three months quit and we have all these lovely hot tamales in the freezer..and family buys them..."now"...they had too many freebies,,,he started charging them..LOL
