Two favorites for fresh and salt water.

Fresh water, when in doubt try a Night crawler. Can be presented in any number of ways, either whole or pieces, on the bottom, floated, under a bubble, and trolled behind a flasher. Works for Bass, Trout, Catfish, Strippers, Crappie, & Blue Gill.

Salt water, Squid, live, fresh dead, or frozen. Whole, cut into strips, or chunks. Works in surf, pier, and offshore. when squid are present this is the favorite food of most fish, Bass, White Sea bass, Halibut, Yellowtail, Jacks, Rock fish, and Perch.

I don't know where you are doing most of your fishing but from So. Cal. where I am, this is what works for me when not using an artificial bait.

There are many good baits to use for all fishing.

One in particular is minnows used at night at dock lights for Crappie. I racked then in and filled a cooler.

Bass fishing at 4:00am you use a top water Zara spook that has the BB inside. You will catch them from 2 lbs to 16 lbs.

Fresh Water.
Trout= Powerbait dough in an Powerbait vented spinner

Salt Water
Yellowtail = Live Kahawai
Snapper = Pilchard
John Dory = Live jack mackeral

i think live bait is best. i live in Canada and mostly fish gravel pits for bass , pike and perch. mostly i catch small minnnows and bluegills sometimes crawfish or frogs for big bass and pike, in a cast net instead of buying them from a baitshop.
and i've fished in the gulf of mexico with live bait small bait fish and shrimp for snook and tarpon , basically i always use what the fish has to eat in its natural habitat, but ofcourse plastics and lures can imitate them if u cant get real live bait.

i need info on where you are fishing. but i really have success using black rubber worms or purple worms for large mouth without a weedless hook(just put the worm over the tip of the regular hook) i think the bass can sense the hook more when it is weedless or i like getting jigs and bobbing them around off a boat in thick grass, because is tares through the weeds and the big bass hang out in those areas

Depends on what we are fishing for. My personal favorite for cutthroat is one I make with a rainbow colorado blade, colored beads and a small two tone dick night with a night crawler. Used with no weight on a down rigger.

For trout the baby cowbells with a wedding ring and worm
For humpies a copper/nickel dick night
For other salmon in rivers salmon eggs clusters
For salmon in the salt water herring

i fish for mostly trout and salmon, for trout there is no better bait than berkley power bait, they also make all kinds of imitation bait however i have never used them, for salmon herring or a buzz bomb, thats in the bay of course.

I love to use greenbacks. They are great whit bait!

I have caught lots of spotted sea trout, redfish and gag grouper.
