We're going to make chili, but my husband is allergic to green peppers. Can I swap green for red? I know it's okay in an uncooked dish or in a stove-top dish like omelets. But a stew is different. Do the red cook up differently?

There is something about green peppers that gives him migraine headaches. He has the same problems with other foods -- red wine gives him migraines, white does not, for example. He's got about a dozen of items that do this to him.

I don't know why the green and yellow bother him, but the red do not.

They have a sweeter flavor, and also, have more water content when reduced during cooking, but I dont see why not.

You can use green bell ppeppers the red are just a little sweeter...No subs I know of for bay leaf You can use any kind of dry peppers or if all else fails a dash of pepper sauce for the heat. Guess you werent prepaired to make this recipe huh??

You have to try it at least once to see if it pleases him.

It sounds like a good idea to me.

Is it possible that it is another ingredient in chili or stew that bothers him?

I'm not fan of stew and chilli at all.

I prefer a bland diet! Salt free, etc.

Try it as an experiment. It's going to taste different, but that's how new dishes are invented!!!

Given the price of bell peppers today, I.m doing good to have them in the fridge when i need them. I make chow-chow and use all different colored peppers in place of green ones. I have used them interchangeably in other dishes as well. It does not seem to alter the outcome other than looks. They cook up about the same. Given your husbands allergy, I would not feed him ANY bell peppers of any color in any dish.

Peppers are peppers: red, green, orange or yellow - all are bell peppers - going to contain the same chemicals and oils; unless he has eaten red peppers w/o reaction in the past I wouldn't chance it.

how is it that he is allergic to green bell peppers but not the red ones? the red ones are just green ones that have ripened longer, so no I would not substitute those

Yes, you can. They do not cook differently in my experience.
