On peeling a raw potato we sometimes run into black spots that must be cut out. Once in a while, the potato is so black it is discarded. That's OK. We're used to it.
My question is this. We also bake Idahoes. I can't recall ever opening a baked potato and seeing the black spots. What happens to the black spots when you bake. Where do they go?

You're very lucky then if you've never seen a black spot in a baked Idaho. A couple times a week someone would return a baked potato with a black spot inside. No problem, I gave them another baked potato. You don't know if there is one until it's cut open. So you've really beaten the odds!

I have seen black spots in baked potatoes. But we usually toss out the potatoes that have spots that are too bad.
