I am doing a small Thanksgiving dinner this year and need a vegetable dish. I wanted to use the crock pot so I have room for my mashed potatoes and gravy on the stove.
I would like some squash and apple recipes if anyone has a good one, but am open to any veggie dishes you have as long as they are vegetarian.

P.S. I know apples are not a veggie, but they go good with squash, and are a good healthy side dish even on their own.

Hi, I have a winter squash dish that is wonderful. Traditionally it is made in the oven, However I have made it in the crock-pot and electric skillet myself.
Some call it Winter others call it Accorn Squash. I have made this for years for even the pickiest of eaters and never was there any left!
First you slice an Accorn Squash into 1/2 inch slices. 1 inch is also fine but never any smaller or larger.
Make sure that you dont have any of the seeds/insides left on the pieces. You can also cut the slices in 1/2 so that you can wash them in the sink.
Lay the pieces in a glass dish/electric skillet or in your crock pot.
Add 1/2 cup I cant believe its not butter (use what ever you like, I use that because with all of the food I try to still keep it healthy yet yummy!)
1- 8oz can of evap.milk (Carnation)
1 tablespoon of pumpkin pie spice (or apple pie spice if you are using apples in this dish - see below)
1 table spoon cinnamon
1/2 cup sugar
1/2 cup brown sugar (packed)
1/2 cup pecans (optional yet wonderful in this dish)

Add everything and cook for 30 mins on high (oven temp: 350, or electric skillet 300, microwave (cover with plastic and cook for 15 mins)
After 30 mins. stir and turn down on low (simmering) for 20 mins.

Adding Apples to this dish is so awesome! I have tried different ideas with the squash such as Apples, Cranberries, & Peaches. One year I tried it with egg nog instead of the evap milk and that was awesome too. Any sort of nut will work. I use pecans because they are more mild and soft. Even people that find problems with nuts the pecan has always been my answer... not to mention one hell of a hit!
Note: For those of you that would like to try this and are cooking it in the oven, Cover with foil while its cooking. After the 30 mins of cooking, uncover and drop the temp to 325 for the rest of the time. For microwave, Keep covered with plastic during the cooking time and let it sit for 5mins to settle. For electric skillet/crock, keep covered the whole time.

For the apple recipe, I'd go with JonaGolds. A perfect dish for the crock pot (if it's a pretty good sized one) is my gramma's green beans and new potatoes. You don't even need a recipe--Just snap the ends off a few pounds of green beans (I'd say 1/3-1/2 lb raw beans per person), a bag of small red new potatoes, and 4-5 slices smoked breakfast bacon. Wash up all the veggies and pile them in the pot. Cover with cool water. Add the bacon, about 1/2 a palmful of salt, half that much garlic powder, and black pepper to taste. Set your pot on high--depending on the size of the pot it'll take 3-5 hours. That takes care of a veg and a starch. ;)

Squash with Apples
5 pounds butternut squash
4 cooking apples
1/2 butter, melted
1 cup brown sugar, packed
2 Tablespoons flour
2 teaspoons salt
1 teaspoon ground mace, cinnamon, or a combination
Cut squash in half and remove seeds, soft pulp, and fibers; peel and cut in 1/2-inch slices. Peel and core the apples; cut in 1/2-inch slices. Combine the melted butter, sugar, flour, salt and mace or cinnamon. Layer half of the butternut squash in the bottom of the crockpot; top with one half of the apple slices and half of the sugar and spice mixture. Repeat layers. Cover and cook on HIGH for 1 hour, then switch to LOW and cook 3 to 5 hours longer, or until butternut squash is tender.

Cheesy Crockpot Hashbrowns
1 (32 ounces) package frozen hash brown potatoes (partly thawed)
2 (10 ounces) cans cheddar cheese soup, undiluted
1 (13 ounces) can evaporated milk, undiluted
1 (3 ounces) can French fried onion rings, divided
salt and pepper
Spray inside of crockpot with cooking spray.
Add potatoes, soup, milk and onion rings, reserving 1/4 cup of the onion rings.
Add salt and pepper to taste, stir to combine.
Cover and cook on Low for 7 to 9 hours or High about 3 hours.
Sprinkle reserved onion rings over top just before serving.

Slow Cooker Barbecue Beans
Prep: 5 min., Cook: 1 hr. This recipe is perfect for leftover barbecue. Although it calls for pork, feel free to use chopped or shredded chicken, turkey, or brisket. If time is a concern, pick up meat from your favorite barbecue joint (just make sure you get it without sauce to prevent the beans from being too soupy).
1/2 pound chopped or shredded barbecue pork
1 (32-ounce) can pork and beans, undrained
1 (14 1/2-ounce) can diced tomatoes with green peppers and onions, drained
1/4 cup spicy brown mustard
3 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon molasses (optional)
Stir together first 6 ingredients, and, if desired, molasses in a 6-quart slow cooker. Cover and cook at HIGH 1 hour. (You can keep this recipe warm on LOW for up to 2 hours before serving.)
Yield: Makes 8 servings

I don't see why this could not be made in the slow cooker.... take the lid off the last half horu or so so it can dry out a bit.
Yellow Squash Casserole
2 lbs. yellow squash, sliced
1/2 cup chopped onions
1 clove garlic, chopped
1/3 cup oil
Dash of soy sauce
Salt and pepper, to taste
1/4 tsp. thyme
1 lb. ground chuck
1 can diced sliced mushrooms, drained
1/2 stack crackers, crumbled
1/4 cup grated cheese
1. Stew squash, onions and garlic in small amount of water until soft; drain. Add oil, soy sauce, salt, pepper and thyme and set aside.
2. Cook ground meat; drain and add mushrooms. Combine meat and vegetables. Add half of crumbled crackers to mixture. Add cheese.
3. Pour into greased 3-quart baking dish and sprinkle remainder of cracker crumbs on top. Cover and bake at 350 degrees until edges of dish are bubbling and brown, about 30 to 35 minutes.

Will depend on the context really. Which is better as a snack - fresh fruit personally. It's tastier and gives you that tad of sweetness. Which can be better as a snack if you are trying hard to slice back on sugar and lose weight vegetables
