I'm just kind of wondering what is going through my girlfriends mind when she gives me a random kiss on the cheek. And btw girls, i love it when she does it.

It can be an affectionate gesture, or it can be an indication that the person thinks fondly of you but is not romantically interested. It just depends on the situation.
I am glad you enjoy it, and you seem to be very sure of your gf's feelings.
But for me I don't care for it, it seems to be an absent minded "peck" with little emotion.
It is just not something I do, or enjoy. I prefer to turn a man's hand over and kiss tip of his fingers. Everyone is different.
