This is my cut and paste answer. The reason for that is because a tech info is a tech info, you can't beat it (sources below).
PS3 will win the console war, no doubt. Xbox 360 and Wii are so weak from technological point of view, that in couple of years they won't be capable of dealing with serious graphics. GTA IV, for instance, isn't even announced for Wii - this toy won't be able to cope with the game's requirements. Xbox 360 is getting GTA IV, however, the game is going to be released on several DVDs - Xbox 360 owners will have to interrupt gaming process and switch discs (Rockstar complained about this issue). Only PS3 will have it on single BD-DVD.
Let's compare PS3 and XBOX 360:
A third of XBOX 360 (33%) are malfunctioning right from the start. PS3 return rate is only around 0.2%. Despite some people say, that new 360 has no breakdown issues - just visit Xbox section of Yahoo answers and see for yourself an amount of complaints.
PS3 has 8 (7+1) kernels in Cell processor, Xbox 360 -only 3.
PS3 uses advanced tech called Blu-Ray, one disc can store up to 54 gb (in the future - up to 200 gb), Xbox 360 - regular dual layer DVD-9 (8.5GB). It's possible to get HD-DVD (max. - 30GB) for 360, but it'll cost you around 180$, in this case Xbox is going to be MUCH more expensive, than PS3.
Calculations per sec - PS3 - 51-billion-dot-product-operati... per second
Xbox 360 - 33.6-billion-dot-product-opera... per second
PS3 has full media support - USBs, built-in 4 slots card reader (except 20GB and 40GB versions), ability to use printer and so on.
Xbox 360 has USBs and only 2 memory slots.
PS3 supports up to 7 Bluetooth Controllers
Xbox 360 - up to 4 Controllers
PS3 - wi-fi included (except 20 gb version)
Xbox 360 - wi-fi will cost you around 100 $
Graphics are stronger in PS3, due to RSX chip, that was developed by Nvidia exclusively for PS3. RSX runs on 550 Mhz. It's difficult to compare their graphics chips, because 360 has a video chip with totally different structure and operating memory is divided differently in both consoles. However, PS3 exclusives look better than 360's exclusives.
PS3 uses technology from AGEIA company. It does to physics of the game same thing GPU (videocard processor) does to graphics. This thing is on sale for PC(special card). The price is around 350$. There is no such thing in 360.
Xbox 360 is widely known for so-called "red ring of death" problem - it gets overheated easily. My PS3 was running for more than 15 hours non-stop with no problems. Sometimes Xbox 360 becomes so overheated, that thermopaste on CPU melts, drips on motherboard and successfully shortcircuits it. That's why in some countries people call Xbox 360 "Coffin 360".
Besides all of this, I've seen disassembled Xbox 360 - regular PC architecture - Billy Gates is an uninventive nerd (as usual).
When I saw disassembled PS3 - it was a surprise - smart architecture, good cooling (don't buy external PS3 coolers - they make everything worse - original system is good), etc.
In 2008 PS3 will get more than 300 games, including Metal Gear Solid 4, The Agent and other great exclusives. Here is the good link to the future PS3 releases. http://ps3.ign.com/index/release.html......
PS3 online is free, Xbox 360 - you have to pay.
There were reports, that 360 scratches discs. No reports on that in PS3.
The funniest thing, that right now there are no games for PS3, that show full potential of the console. Biggest games weigh only 25 GB (Xbox 360 will need more than 3 discs even for those).
On PS3 you can install other OS, such as Linux Yellow Dog, Ubuntu and others. Sony officially lets you do it. There is no such thing in 360.
PS3 HDD can be replaced easily with any 2.5" SATA 5400 RPM HDD (used in laptops). 250 GB will cost you around 170$. In 360 you have to buy exclusive HDD, where 20GB will cost you 100$.
Sony expects PS3 to stay on the market for, at least, 7-10 years. Also Sony reduces price now. There is a cheaper 40GB version of PS3.
Sony constantly upgrades PS3 software (free updates for OS) - you get new functions and improvements.
PS3 controller (sixaxis) has a motion control - you move controller - game responds. Wii has it, Xbox 360 - doesn't. PS3 is getting rumble controller (Dualshock 3) in 1st quarter 2008, Japan gets it in this November.
On PS3 you can help sick people by running Folding Home project. Wii and Xbox 360 didn't even think about it.
New 40GB is 399$ or 399 euro (depends on the region) - it has no backwards compatibility with PS2 games, has 2 USBs instead of 4, no built-in card reader, but it's the same PS3, strong, reliable, less noisy, different cooling system. The price is friendly.
I didn't mention Wii, because it's so weak, no point to talk about it. Leave it for kindergarten and casual games.

I know it's cliche and you've heard it before, but since most games are cross platform today, and each system has only a few exlusives, (xbox: halo, mass effect, bioshock; ps3, ratchet & clank, warhawk, resistance, uncharted, and socom) you then have to look at other things. So when you start to add up the systems and what they can do, the PS3 is by far cheaper than a comparibly equipped 360, and as far a reliability goes, I'd rather be playing my machine than waiting for it to come back for the 3rd or 4th time from Microsoft because of another Red Ring of Death. Over 30% of all 360s fail with the 'Red Ring of Death', and the PS3 has it's own problems, the failure rate on those are .02%, that's right less than 1/2 of 1% failure rate on the PS3.
To me there is no question which is the better machine. PS3 without a doubt.

PS3 fangirl here...
I'm not a 360 hater. But, I do honestly believe that the ps3 is a better console than the 360.
A few reasons why:
6 usb ports
sd card reader
blu-ray
built in web browsing
connect wirelessly to your psp via "remote play"
free online gaming
up to 7 wireless bluetooth controllers
Playstation Online Store with access to many free downloads and free game demos
wifi out of the box (no expensive add on)
Built in Hdmi support
resolution @ 1080p!!
killer backwards compatability on the 60gb model
Very soon, Playstation Home will come out and will give you the ability to be in a Sims like environment and find people to play online with. Not to mention making new friends, buddy lists, etc.
Xbox's are infamous for breaking from non sufficient ventilation. There are add ons that prevent this, but extra money. Oh, you want wifi? Extra mulah. You want to interact with other users? EXTRA! All of those are free with the ps3.
And quite honestly, I appreciate the PS3's graphics 10 times more than any xbox model I've ever played on. I really love its user interface, too. It's very clean and organized.
Also, I just found this coupon for 20% off any kmart purchase. And you know what Kmarts carry? PS3s!

I got a PS3 after probably as much research as anyone. It is set for the future, and is more than a console. PS3 is not locked in to dx9 like 360, PS3 runs on 25gb blu-ray disks (dual layer is 50gb) while 360 is on 8gb DVDs so once that becomes too little of space you will see worse games coming out (GTA4 is an example, developers are struggling with the lack of space) one of the most important reason...RRoD (Red Ring of Death) hardware failure witch infects about 1/3 of 360s. Some say that it is under control now, but for me it was WAY too much of a risk to spend 600bucks+(console, controllers, live, games...etc) and have my console fail me. And the final reason, another very important one...price
-360 console $400-$500 (depending on model, ya theres core but thats a joke)
-Live $50/year
-wifi adapter $100
-HDDVD Player (optional, may need in the future if dvds get to be not big enuf for games...) $200
-PS3 console $400-$500 (depending on model)
-Online play FREE
-wifi included FREE
-Blu-Ray included FREE
So you decide...but I don;t see a reason why to get Xbox unless you LOVE halo or something. Also many say Live is WAY better than PSN, okay....I've never played LIVE but I know that once you're playing the game its the same, so the benefits must be things like friends, chat, and options like that which to me are not important.
ps. I didn't mention graphics yet, and here it goes: On paper PS3 has 360 beat, but developers haven't utilized the potential yet so 360 does look better now. BUT its such a small difference that I guarantee you will not notice it while playing or ever be disappointed with PS3's picture.
So there you go, I recommend PS3. And whatever you decide get yourself a copy of Call of Duty 4: Modern Warfare
And to what Eligy said... Gamespot is so biased toward 360...so obvs he says that. But more importantly, he said he had all 3: PS3, 360 and Wii, so that means when his PS3 breaks down he can play his PS3, and like I said if you have both you'll probably be gaming on the 360 cuz its a better GAME console, but its so underequiped, and he obvs doesn't have to worry about money so he probly has a HDDVD drive, LIVE even wifi probably so don't listen to him. People with both 360 and PS3 give the worst advice cuz they didn't make a decision and don't have to live with the consequence...do I sound jealous of him...OBVS I am, but what I'm saying is most people don't have the money for both and so their decisions should be valued more since they, like I said, had to make a choice and now are living with it.

Let me start by saying, I own all three. This is my summary review of the two you want.
360:
360 is a must own. It has a 250+ game library, great visuals in almost everyone of them, and possibly the best experience to get out of gaming. Not to mention the 12.95 monthly payment (or other option) for xbox live, the largest online gaming community. Although 360 is know for it's amazing shooter games, it has a wide variety of good genres, including, FPS, RPG, Racing, Sports, action/adventure.
With xbox live gold you can go online in ranked matches and play online and compete in leaderboards and tournaments. Not to mention the friends you make, such as clans and teams.
Also with xbox live you can get access to the XBL Marketplace including downloadable arcade games (100+), HD Movies, music videos, game videos, game and movie trailers, tv shows, and gamerpics and themes to brighten up your xbox and gamercard.
Speaking of a gamercard, it is your own personal name that you choose. This is the best way to play games. If you have an extra 400$ get the black elite 360 but if not get the regular xbox premium.
And to the guy who said that thing about the bugs, many 360 users have stopped experiencing bugs in systems completely since the mid summer, and if you get a certain glitch/bug such as three rings of death your system is backed with a 3 year warranty for free repair.
Do not get a PS3 whatever you do, 50 games at the most, ys the online play is free, but we are talking about a lagfest here. Resistance fall of man has 40 player online multiplayer....you cannot say that isnt laggy without laughing.
I actually own all three next gen systems and i tell you this, i play my 360 at all times and wii a lot too.
I have only played my PS3 twice since i bought it at launch.
If you get a 360 here are the basic games you must pick up with it:
Halo 3
Call of Duty 4: Modern Combat
Forza Motorsport 2
Skate.
Project Gotham Racing 4
Guitar Hero 2 and 3
PS3:
This piece of trash if you will, is total crap, people brag about it having an internet browser....but who bought a PS3 to browse the internet, why not use the computer one or two rooms away or get a freaking laptop, GAMING SYSTEMS WERE MEANT FOR GAMING. This system is a poor excuse for next-gen, the visuals are okay on some games...which is very few due to the few games on it. I have not yet played a game on the system that takes full advantage of the 600 system i paid for. And xbox has everything that ps3 has except blu ray (which only sony uses, because they think they are all mighty and when most of the games dont even use up half the space on the BR disk.). Not to mention, the laggy online play. It is pretty horrible. The only other thing the PS3 has on the 360 is the built in wi-fi. THATS IT. 360 has a huge marketplace to buy all kinds of media, ps3? not up to par. it is pretty horrible, i do regret buying it. no matter what kind of ps3 fanboys you read they all hate 360 because they know it is better and they spent their money on the overpriced ps3. the only game that is hal as good as any game one the 360 is COD4: modern warfare, and that not an exclusive. and yes...i have played resistance...is it horrible.
Lesson from the wise: get a freaking 360
