When I say "an infinite amount of time", I don't mean since the start of the universe (which, according to Creationists, is less than 10000 yrs). I mean, since god is beyond space-time, before the universe was created he had an undefined amount of time to tinker with his magicky powers.

How can you be certain that Man is, in fact, the final product of an omnipotent entity who had an infinite amount of time in which to create? If such a deity/being exists, then he/she created a COSMOS; we here on Earth can observe only this planet. Quite possibly the Creator might have produced elsewhere in the Universe beings much more highly evolved than we are.

Your question shows that you're trapped into thinking that man is the alpha & omega of the omnipotent's agenda.
"an infinite amount of time" ... that's forever: not just til now, but forever
Soooo .... who's to say that what the omnipotent has done until now will be what the omnipotent does in the fullness of time?

Sure! If man were created perfect, he'd have nothing to strive for and wouldn't need a relationship with God. Man would still need salvation though.
