I don't know for sure, but I have two ideas.

Use lemon juice. It's a natural preservative.

Also, pour on olive oil to cover before you put the lid on it. It'll keep the air out.

For freshly made hummus it will only keep a 2-3 of days in the refridgerator once made. You have to be very careful and have expert knowledge on how to conserve it otherwise it can lead to food poisoning. However some people make the chick pea paste after boiling them, then add lemon juice, salt , and garlic and freeze it in air tight containers. If it is a little dry after removing from freezer just add a little more olive oil. I haven't tried this though.

For canned, you will need to take more care as some of them contain sesame cream and also some people mix sesame Tahini with fresh hummus , don't add this as it has a very short life span and is subsceptible to carrying the salmonella bacteria. To be on the best side , it is always best to serve it as soon as it is made.

I like the adding olive oil idea. Another thing I do is that I'll freeze hummus. However, it can change the texture, so test it out first to see whether you like the result. I only freeze hummus when it's just for me, and take it out a day or so ahead of time and let it thaw in the fridge.

Not sure if it will work but they sell plastic bags with silver lining. Keeps cheese and veggies and meats fresher up to like 2 weeks longer than other bags.
I think its offer by RONCO corporation or some other infomercial program on TV.
