I don't think that has anything to do with the Wiccan religion. It may be a part of her own ideals, but I've never heard of a Wiccan giving their blood as a symbol of love.
It's an interesting thing, though... do you know specifically what branch she identifies with? You might want to ask her about it.

Never heard nor read about that being part of Wicca.
I can see vampirism. Also sounds like what Angelina Jolie did with Billy Bob Thornton. She gave him a vial of her blood to wear around his neck.
Perhaps she watched a program on her doing it?

There is nothing in Wicca specifically for or against the practice. You say she says that this is what "they" do to show their love. Does she mean Wiccans? It's certainly not a widespread practice. it sounds to me like something she personally wants to do but is using her religion as an excuse.

Wicca is a life affirming faith. Meaning it dose not use blood in rituals.
I'd suggest maybe your G/F might be combining some Feminists elements into her faith.

Many Wiccans are into weird stuff. It may be something symbolic to her, like of your relationship together, or she may want to use it in a spell or ritual. Seeing as how many Wiccans believe in different things, it's impossible to tell.
If it makes you uncomfortable, just tell her.

I am going to add a note after listening to the lyrics of a song by Sinead O'Connor which intrigued me: It talked about us, humans, mammals whose live their lives with blood. So different to the sap of a tree or a plant is the blood of a mammal.
