Pancakes
2 cups all-purpose flour, stirred or sifted before measuring
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, slightly beaten
1 1/2 cups milk
2 tablespoons melted butter
hazelnuts (optional)
PREPARATION:
Sift together flour, baking powder, and salt. In a separate bowl, combine egg and milk; add to flour mixture, stirring only until smooth. Blend in melted butter. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake: cook until bubbles rise through the middle of the pancake and break on the top, and edges begin to look dry ; turn and brown the other side. Sprinkle with hazelnuts. Serve with maple syrup and butter.
FOR VANILLA PANCAKES
Add 1 teaspoon pure vanilla extract to the milk and egg mix
FOR CINNAMON PANCAKES
Add 2 tablespoons ground cinnamon to the flour mix
TIPS:
# Test the pan before cooking the pancakes by throwing a few drops of water onto it. If the water jumps around and then disappears, the pan is at the correct temperature
# keep warm in a single layer on baking sheets in a 200° oven for up to 15 minutes
