PEANUT BLONDIES (Bar cookies)

1/2 c butter
2 c brown sugar
1 c peanut butter
4 eggs
2 tsp vanilla
1 c flour
2 c peanuts - chopped

Cream butter and brown sugar. Beat in the peanut butter. Beat in the eggs. Beat in the vanilla. Gradually blend in the flour. Spread the mixture evenly in a sprayed 9" square baking pan and sprinkle the chopped nuts over the top. Bake in preheated 350º oven for 30-35 minutes until a knife inserted in the center comes out clean. Cool in the pan on a rack before cutting into large or small bars. NOTE: Chunky peanut butter makes an even nuttier bar.

PEANUT BUTTER COOKIES

1/2 c corn syrup
1 c peanut butter
1 c granulated sugar
6 c corn flakes

Bring corn syrup to a boil and cook until it registers 234 to 238º on a candy thermometer (soft ball stage). Remove from the heat and stir in the peanut butter and sugar, blending thoroughly. Place the cereal in a large bowl and pour the warm mixture over the top, stirring until well coated. Drop the mixture by spoonfuls 1" apart onto a wax paper-lined cookie sheet. Refrigerate until thoroughly chilled.

Someone posted this recipe a while back. It doesn't even call for flour.

1egg
1cup peanut butter
1cup sugar

Roll into small balls, flatten with fork and bake at 350 degrees for about 12- 15 minutes.
