Pumpkin pie is my favorite YUM!

This is my favorite. It is a variation on the pumpkin pie but it's made into a cake instead. The crust is a shortbread crust, the filling is just like a pumpkin pie and it's topped with a Streusel topping.

STREUSEL PUMPKIN DESSERT

Crust:
1 1/2 c flour
1/4 c sugar
1/4 c powdered sugar
1/2 c cold butter

Streusel Topping:
1/4 c brown sugar
2 T flour
1 tsp cinnamon
2 T cold butter
1 c chopped pecans

Filling:
1 large can pumpkin (not pumpkin pie filling)
1 c sugar
1/3 c brown sugar
1/4 c cornstarch
3 tsp cinnamon
1 tsp salt
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp cloves
2 (12 oz) cans evaporated milk
4 eggs

Whipped cream - for garnish (optl)
cinnamon - for garnish (optl)

Crust: Combine flour and sugars. Cut in butter until crumbly. Press into a sprayed 13x9" pan. Bake in preheated 350º for 15-20 minutes or until very lightly browned.

Streusel topping: In a small bowl combine brown sugar, flour and cinnamon. Cut in the butter until crumbly. Stir in pecans. Set aside.

Filling: Combine sugars, cornstarch and seasonings. Gradually beat in the pumpkin, milk and eggs until smooth. Pour over the crust. Sprinkle with the Streusel topping. Bake in preheated 350º oven for 55-65 minutes or until a knife comes out clean in the cneter. Cool on a rack. Cover and refrigerate overnight to meld. Garnish with the whipped cream and additional cinnamon if desired.

My late wife always made a chocolate meringue pie from scratch. Great home-made crust, melted bakers Chocolate, and the meringue was mounded high and slightly browned in the oven. It was the best pie I ever put in my mouth. She also made a pecan pie that would disappear soon after serving. Chocolate Pie is # 1, I am going to try and make it this year.

Pumpkin pie is ok, but I don't like it much. Pecan pie and apple pie are better

I usually make pumpkin pie and cheesecake for a variation. Pumpkin pie is the best though.

Different strokes for different folks... My tradition is I love a piece of pumpkin pie w/cool whip on T'giving morn,, while I am preparing.. some people love pecan, mintz meat, apple. pumpkin.. hey be grateful you have food..
