Coconut milk hot chocolate
1 13.5-ounce can unsweetened coconut milk
1 ounce finely chopped or grated chocolate (preferably dark)
Heat the coconut milk in a saucepan until hot but not boiling. Add the chocolate. Stir until completely melted. Serve hot.
Makes 2 servings

Ingredients
3 1/2 oz can of unsweetened coconut milk
a bit less than 1/4 c sugar
a bit less than 1/4 c corn starch
Directions
mix dry ingredients in small saucepan
gradually stir in cocunt milk (making smooth runny paste)
stir constantly over medium heat until it ebgins to thicken
reduce heat to low, bring to a aimmer approx. 1 minute
pour into lightly greased pan/mold
place saran wrap over it (touching the pudding so it doesn't create a "skin")
refrigerate approx 5 hours
serve with cinnamon or cut-up tropical fruit (papaya, mango, etc)

I can't think of any baked goods my kids like w/coconut milk. But... we do make these smoothy type of drinks that are soooo yummy!! (And easy!)
You need:
1 small banana, coarsely chopped
1 (16 ounce) can pineapple juice
3 tablespoons coconut milk
1 tablespoon white sugar
Then you:
Slice banana, place in blender, pour in pineapple juice, coconut milk and sugar; blend until smooth. Pour into a glass and serve.
You could also make non-alcoholic pina colada's. They use a little more of the coconut milk.
You need:
1 cup coconut milk
1 cup pineapple juice
4 tablespoons white sugar
8 cubes ice
(after the little ones go to bed you can add 1/2 cup rum!)
Then you:
In a blender, combine coconut milk, pineapple juice, rum, sugar and ice. Blend until smooth. Pour into glasses, and serve immediately

Either add it into homemade ice cream by substituting it for some of the liquid. Or just mix some into pre made ice cream and refreeze it. Whats not to love about ice cream. Or try making a normal whit cake batter with it and whatever liquid it says to use substitute that much coconut milk. Then ice it and stick on coconut shreds. That will also be very fun for your ten year old!

HOW ABOUT COCONUT JUICE, PINEAPPLE JUICE, ICE, SPOT OF MILK, PUT IT ALL IN THE BLENDER AND TOP WITH WHIPPED CREAM FOR A NON ALCOHOLIC PINA COLADA!!!
