Chip beef is dried beef sold in little glass bottles at most grocery supermarkets. Recipe most often associated with chipped beef is the meat in a white cream sauce poured over toast, mashed potatoes or biscuits. This is a great item to have on hand for use, or to keep in the cupboard for emergency preparedness needs.
In the dictionary it says:
These wafer-thin slices of salted and smoked, dried beef are usually packed in small jars and were once an American staple. Chipped beef is also referred to simply as dried beef. "**** on a shingle," known in polite society as SOS, is military slang used for creamed chipped beef served on toast.

Chipped beef is a dried, smoked, & salted meat product, consisting of small, thin leaves of partially dried beef that comes in a glass jar or a vacuum packed pouch. Armour is the best brand in my opinion. It's found in the grocery aisle where tuna, etc. is found. It's used when making creamed chipped beef on toast, biscuit, or mashed potatoes. In the Army, it was served & called SOS. (sh-- on a shingle)

I agree with everything Nisey said, except a good butcher will carry it. I would not buy it in a jar.
My dad was a huge fan. It is quite tasty when fresh. YUMMO!
But it is also pricey.
My mom made a cheap version of SOS. She used ground beef instead of chipped beef (or dried beef).
Also quite tasty.

You can find it at the grocery store, in a glass jar usually. It is dehydrated slivers of beef. It is real good in white gravy over toast.

just buy some beef, roast it until tender then cut into bite sized pieces & make a gravy & serve over rice.
some stores have it already cut up, advertise it as stew meat,
most butchers will help you
