try a trifle

You just take like a pumpkin, cinnamon, gingerbread, or any other type of thanksgivingy cake (one is enough) . Then cut it into cubes.

Take a 15oz can of pumpkin "mush", a little vanilla, a a few teaspoons of sugar depending on how sweet the cake is.

Then either buy or make whipped cream.

(to make the cream just whip a pint of heavy whipping cream and slowly ad in powdered sugar to taste, usually about a 1/4 of a cup for a pint of whipped cream.)
Then in a large torte bowl so it'll look nice or anything see through layer cake, pumpkin filling, whipped cream, and repeat to fill bowl. You'll probably do it twice. Make sure the final layer is whipped cream then sprinkle gingersnaps over it for garnish.

I saw a recipe like this on food network.

Bring some lightly flavored fruit sorbet like lemon, peach etc. Serve it in little portions halfway through the meal. The sorbet helps to freshen and cleanse the palate. It would bring a nice elegant touch to the meal. Plus it is different from the usual dessert. Many fine dining restaurants serve sorbet during the meal service.

Gosh, there is an unlimited amount of things to pick from! You can't go wrong with easy, elegant cream puffs, which, if you wanted to bother with, you could make your own special version by making a pumpkin chiffon with whip cream and fill the puffs with that....or not!

Ice Cream Cake from D.Q, is yummy.....

I know you say you don't want to bring pumpkin pie, but I found a great recipe on Allrecipes.com where instead of using milk or condensed milk, you use softened vanilla ice cream. It's fantastic. I give major kudos to the lady who thought of it. Check it out.

Ok this recipe is incredible! Just use butter instead of shortening, double the nutmeg, add 1/4 t ground cloves, and I omitted the raisins and nuts because of allergies. They didn't last a day at my house!
