Rosewater and orange water are used to flavor middle eastern and Indian sweets. They can be purchased in Indian, middle eastern, or specialty groceries. I'm sure you can find them on-line as well.

Blanched almonds have the brown skins rubbed off. You can buy almonds blanched (look for the white ones without skin) or you can blanch them yourself. To blanch almonds, place whole almonds with their skins on into a bath of boiling water. Leave for about a minute in the boiling water and then drain. Let cool slightly and rub the skins off with your fingers. Then, place the blanched almonds on a bed of paper towels to remove the water. If you like, you can toast blanched almonds in your oven or on the stove top in a little oil. If you are using them in a dessert recipe, don't toast them unless the recipe calls for roasting.

Blanched almonds are almonds that have been heated in water to remove their skin--you can buy them whole and unblanched, blanched whole, slivered, sliced and crushed.

If you would like to buy them whole, in bulk, here is how to blanch them.

Difficulty: Easy
Time Required: 5 minutes
Here's How:

1. Place almonds in a bowl.
2. Pour boiling water to barely cover almonds.
3. Let the almonds sit for 1 minute and no longer.
4. Drain, rinse under cold water, and drain again.
5. Pat dry and slip the skins off.

Tips:

1. Don't let almonds sit in hot water too long or they will lose their crispness.
2. 1 pound of almonds in the shell will yield about 1-1/2 cups shelled.
3. 1 pound shelled = 3 cups whole or 4 cups slivered.

Rosewater is water infused with essence of roses; it smells like a rose. Same w/ orange water, infused w/ orange scent.

Blanched almonds basically mean you buy them slivered or sliced in a package at the store.
