In some old houses the cellar is subdivided; ours has a general cellar area and one for the coal, but just one access.
In stately homes there are several separate cellars in which various things were stored in the past, such as wine, preserves, cured meats, vegetables, etc...and some cellars were used as laundry areas to wash and dry clothes.
In that sort of context, they are referred to in the plural.
