pork goes well with apricot stuffing, also you can buy it in the shops near Christmas - I love red pesto with pork or black olive pesto - something to zing up the pork which can often be bland. I guess the best thing is to buy the meat organic and hand reared, etc. that way you get the best flavour. Try boar rather than pork - that would be neat and be almost 'king in the castle' banquet like!

Roast pork would be more like a traditional English Christmas dinner, turkeys are not native to England. Also lamb, goose or duck would be nice.
You can roll various types of stuffing into pork.

i had cockeral and chips one year, would not recommend it.
lol..
if you dont fancy turkey how about roast beef? you can sear the top, pour some olive oil over it..
i personally cut the meat in half-through the middle as opposed to down, if you get my meaning. lol.
i then place halved red onions and cloves of garlic inside the meat.... cook it for as long as you like......its something simple yet looks and tastes fantastic!

CROWN ROAST OF PORK WITH WILD RICE
STUFFING
1 crown roast of pork (6-7 lbs.)
2 (6 oz.) pkgs. wild rice mix
1/2 c. chopped onion (1 med. size)
1/3 c. chopped celery
1 clove garlic, finely chopped
1/4 c. (1/2 stick) butter
1/2 c. pine nuts
1 (8 oz.) pkg. dried apricots, chopped
6 tbsp. chopped, drained, preserved ginger
1/2 tsp. ground allspice
6 whole cloves
2 bay leaves
3/4 - 1 c. Madeira wine
1 (13 3/4 oz.) can beef broth
1. Preheat oven to hot, 400 degrees. Place roast on rack in long shallow roasting pan.
2. Cook rice according to label directions.
3. Saute onion, celery and garlic in butter in skillet just until tender, about 5 minutes.
4. Combine sauteed vegetables, rice, pine nuts, all but 2 tablespoons of the apricots, ginger and allspice in bowl; mix well. Spoon lightly into center of roast. (Spoon any extra stuffing into buttered shallow baking dish; bake during last 20 minutes of roasting.) Cover ends of bones and top of stuffing with foil.
5. Roast in preheated hot oven, 400 degrees for 10 minutes. Lower oven temperature to slow, 325 degrees. Roast for 30 minutes per pound of meat, 3 to 3 1/2 hours, or until meat thermometer registers 170 degrees when inserted in thickest part of roast; do not let thermometer touch bone or fat.
6. Remove roast to heated serving platter. Keep warm while preparing gravy.
7. To prepare gravy. Skim off and discard fat from pan drippings. Add cloves, bay leaves, Madeira and broth to juices in pan. Cook over medium heat, scraping up any browned bits from pan. Increase heat to high; cook until gravy is reduced by a third. Strain into sauce boat. Serve with roast and any extra stuffing. Garnish rib ends with kumquats, if you wish.

Really any kind of stuffed pork is really good. You might want to look up a recipe for pork stuffed with rosemary and sage. I remember that tasting awesome. Stuffed pork is good to eat with a little bit of mint jelly.

No contest, Goose!!! It is to die for, but DON'T buy a frozen one, it has to be fresh.. and keep the fat it gives off, the roast potatoes cooked in goose fat are simply sublime..

Fruity Glazed Cola Ham
Ingredients:
12 lbs ham (fully cooked and bone in)
1/4 cup orange juice (no pulp)
3 tablespoons orange liqueur
3/4 cup cherry preserves
1 teaspoon allspice
20-30 maraschino cherries (optional)
Directions:
1Preheat oven to 325 degrees.
2.Place ham in a large roasting pan.
3.Trim most fat from ham, leaving some.
4.Cut ham cross wise into diamond patterns all over ham. (enough to let glaze get to meat through the fat).
5.Season ham with allspice.
6.Pour the cola in pan and bake uncovered for about 1 hour, basting frequently about every 10 minutes.
While ham is cooking, combine orange juice and liquor, cherry preserves until melted and fully combined.
7.Remove ham from the oven and brush with the fruity glaze all over the ham.
8.Return to the oven and continue to base frequently.
9.You may cover with foil if it begins to brown too much.
10.Cook until done or internal temp reads 140 degrees.
11.Remove ham from oven and decorate with marshcino cherries.
12.Let rest for about 30 minutes before slicing and serve with any left over glaze.
