Sirloin Tip Roast
New (red) potatoes in sour cream dill sauce
Steamed broccoli with chive butter
Hot garlic rolls

Sirloin Roast

Cover roast with sliced onion and one package of dry onion soup. Then cover that with a few shakes of both Worcestershire and Soy Sauce. Cover with foil and bake at 325 for 2 hours, then 300 for one hour.

This will create a nice au jus gravy as it cooks.

During last 25 minutes of roast cooking time, cook new potatoes in boiling water. I add some chicken bouillon granules to the water. Drain potatoes well in colander. Toss with melted butter, sour cream, and dried dill . Sprinkle with salt and pepper.

Chicken Adobo

INGREDIENTS
2 tablespoons vegetable oil
1 (3 pound) chicken, cut into pieces
1 large onion, quartered and sliced
2 tablespoons minced garlic
1/3 cup white vinegar
2/3 cup low sodium soy sauce
1 tablespoon garlic powder
1 teaspoon black pepper
1 teaspoon sugar
1 bay leaf

DIRECTIONS
Heat the vegetable oil in a large skillet over medium-high heat. Cook chicken pieces until golden brown on both sides, then remove. Stir in the onion and garlic; cook until they soften and brown, about 6 minutes.

Pour in vinegar and soy sauce, and season with garlic powder, black pepper, sugar, and bay leaf. Add the browned chicken, increase the heat to high, and bring to a boil. Reduce heat to medium-low, cover, and simmer until the chicken is tender and cooked through, 35 to 40 minutes.

Serve over a bed of white or brown rice. Delicious!

Yesterday morning I started a batch of dough for Italian bread. It's a double rising process, total of four hours, start to finish. For dinner we had homemade linguine and white clam sauce, spiced with red pepper and sprinkled with fresh grated Parmesan. Of course, the bread too.

Red beans and rice with cajun spiced grilled fish.

Used 2 pkgs of Rice a Roni red beans and rice, adding a little extra cajun seasoning and some diced green bell pepper.
Grilled the fish (snapper fillets) after seasoning with about a tablespoon of cajun spice.
Served with a tossed salad and black beans.

I made Terriyaki noodles and baked brushetta bread with pico de gallo on top. There really isn't a receipe, I just followed the directions on the back of the noodle package and back of the box the brushetta came in.

Last night we had lemon-honey-mustard chicken and rice. I got one of those Campbells Supper Bakes packs, some boneless skinless chicken breasts and prepared it according to the package. Before I put it in the oven, I stirred some honey mustard salad dressing into the rice and on top of the chicken. Very tasty.

Spaghetti and corn muffins.

Spaghetti noodles boil according to pkg directions. Brown a pound of hamburger, drain, add 1 jar of tradional Prego spaghetti sauce. Serve over noodles.

Corn Muffins - box of Jiffy corn muffins made according to pkg instructions. Served with butter and honey.
