Well, how do you know that God didn't change the rules again, and from now on you're supposed to follow Islam? Jews knew and lived by their scripture and wholly rejected Jesus (with the exception of a few questionable characters that Jesus convinced to follow him) and even today they still reject Jesus because of their scripture. What makes you so confident that even though the only culture in the world that followed the god known as YHWH rejects Jesus and are damned because of it, you aren't damned for not accepting Muhammad? You say you know your scripture and the scripture says nothing about Islam, but the Qu'ran says differently, just like Jews knew their scripture (Tanakh) said nothing about Jesus even though the Christian bible clearly says it does.
By the way, for those that say there were many Jewish converts to Christianity, there are also many Christian converts to Islam.

I have wondered that myself. If God is so fickle that he absolves his covenant with the Jews, then what makes the Christians think he did not do it again?

Hearing the gospel and understanding and accepting it are two different things. One has to internalize the teaching of Jesus Christ, continue to search, ponder and pray about what you "hear". If I'm not out of line saying that I belong to the Church of Jesus Christ of Latter-Day Saints (Mormons) we read in the Book of Mormon that when you read about the doctrines of Christ and ask with a sincere you will know (feel in you heart) by the Holy Spirit if they are true or not. If you don't believe or know about the Book of Mormon, the same process works for the Bible as well ( we believe in that book too). As for God changing the rules; He is the same yesterday, today and forever, for that you can be sure. I believe that ALL good people you believe strongly in their god (with the exception of anyone who says their god tells them to blow people and things up) will not be going to hell. When the time is right, the whole world will know the undeniable true gospel and have the free agency to accept or reject. For now I would suggest you keep searching and researching; you'll find the answers without a doubt.

The Jews were told by God that they were following error (Isaiah Chapter 1) God tells them that he was tired of their burnt offerings and blood sacrifices and how they kept the feasts and new moons. He told them to come and reason with him that thou their sins be like crimson he would make them white as snow. How could he do this without if he was tired of their burnt offerings and blood sacrifices?
The answer is they need to call on the Name of the Lord and that name has now been revealed, Jesus Christ. For all who call on the Name of the Lord shall be saved.

Don't forget about the Mormons. There is some SBC pastor who wants them to be declared the 4th Abrahamic religion.
Technically, without Paul there would be no christianity. Would just be a Jewish sect who followed the teachings of a rabbi named Jesus. Jesus was thought to be the Messiah by some during his time. That would be end of that.
