How hard you tamp your coffee will depend on how fine the coffee is ground. Two things you must do to achieve a good espresso:
1. Fill the coffee basket so that when the coffee has been brewed you can see the imprint of the filter/shower above in the coffee.
2. Tamp the coffee hard enough that it flows slow like treacle, but not so hard that it only drips out.

The idea of tamping is to restrict the flow, creating a back pressure which then extracts the oils out of the coffee and allows the water to spread right through to acheive maximum flavour. You will know if the espresso has been made correctly by the crema that floats to the top of the coffee. It should cover the entire surface and be a golden brown colour.

Yes tamp the espresso. Dont tamp it down too hard or it wont brew right, and if it is to loose it will come out bad. I have worked many coffee shops.
