Good question, since i'm on a diet too, here's a few tips that I do. Though she doesn't like veggies, do you happen to have a juicer at home? maybe u can juice up some fruits and veggies and she won't know the difference. you can try 1 whole carrot, 2 apples, handful and grapes, and some brocolli. if that doesn't work, try making skinless/boneless chicken breast with a little lemon juice a pinch of salt/pepper to taste. You can also try asking her what she likes to eat and maybe reducing the calories and fat in the recipe and it should come out just as good. hope this helps you. here'd a few sites that might help.

Sugar-crusted Salmon with Florida Grapefruit and French Green Bean Salad
This recipe was among the top three winners in a national competition of grapefruit dishes that met the Best Life Diet nutrition standards! For the other winners, go to thebestlife.com.
INGREDIENTS
2 Florida grapefruit
1/4 cup cilantro
2 key limes
4 (5 oz.) portions of fresh salmon fillets
2 tablespoons natural cane sugar
1 1/2 cup French green beans
2 tablespoons extra virgin olive oil
1/4 cup dried cranberries
1/2 cup cooked brown rice
Non-stick spray
Peel and segment grapefruit. Reserve 8 slices and roughly chop the remaining fruit. Finely slice the cilantro. Zest and juice the limes. Set aside.
Place salmon fillets skin side down onto a baking sheet coated with non-stick spray or lined with non-stick aluminum foil and place under a hot broiler. Cook for 5 to 6 minutes or until desired doneness. Remove and lay two slices of grapefruit on top of each of the fillets. Evenly sprinkle the cane sugar over the grapefruit on top of the salmon portions and place back under the broiler to caramelize the cane sugar. Watch closely as this happens quickly.
In a large bowl, toss the green beans with olive oil, zest and juice of the key limes, chopped grapefruit, sliced cilantro, cranberries and prepared brown rice. Evenly portion and arrange mixture in the center of four dinner plates. Place salmon fillets on top of green bean salad mixture and serve. Serves 4.
Nutritional information: 398 calories 34 g protein, 39 g carbohydrates, 5 g fiber, 13 g total fat, 1.9 g saturated fat, 83 mg cholesterol 70 mg calcium, 111 mg sodium.

Sounds like a person who developed very poor eating habits and now cannot shake them. Perhaps she really does like vegetables but has not had them prepared well. Vegetables in a can taste like crap but fresh frozen is good. Also, try fruit salads, lean beef , chicken, center cut pork chops. A small baked potato is fine with low fat sour cream, 2 % cheese, and some chives.
One thing is for certain... if she only likes fatty foods, she may not see her 40th birthday.

Well, if she likes fatty foods.. She CAN have them but, in moderation... I would try serving her a nice tossed salad with a low fat dressing... A grilled chicken breast w/ a small portion of baked french fries... Serve the meal on a smaller dinner sized plate so it looks like a lot of food.... If she likes dessert a low fat frozen yogurt/ice cream is nice with some fresh fruit... Or a few strawberries dipped in dark chocolate...

this is not really a recipe but i lost 13 pounds by eliminating juice and soda and just drinking green tea. (not instead of food) really works.
