The wall is sound but the brickwork is all over the place. Is there any thick coating or paint I could apply to cover it all?

If the wall has NO cavity then don't do anything because you will seal the wall, trap moisture and the wall won't breath. Only render such walls with lime mortar.

If it has a cavity, then render with sand and cement.

You can paint the brick, but normally painted brick looks like low rent.

You can put a facade over the brick consisting of stucco or lathe framing and a new wood exterior wall. More expensive, but protects the value of your investment in your home.

Yea masonry paint would do it, its still going to look rough tho.
You couls always use a 'slurry' ...its like a watery mix of sand and cement covers a multitude of sins.

Elastrometric masonry paint is probably your best bet. Bedek makes one called Extra-Flex.
