Yes, Tai, and I like to go to some restaurants.
Gene, there are many recipes in my mind, I like milky fish stock soup base or thousand years egg with corriander soup base both are Cantonese style! I also like the lobster stock soup base (yes, prepare the stock with 2 heads shells of 1.5+ kg lobsters and slice the tails for hot pot or sashimi.. yummy)

Recipe for fish stock:
fresh ginger (a few slices)
1 lb fresh water fish (freshly killed), dry with kitchen towel, sprinkle some freshly grounded white pepper on it, season for 10 to 15 minutes
1 lb Chinese Cabbage (cut into bite size)
2 tablespoons of peanut oil
1 tablespoon of sake (or cooking wine)
2.5 litre of water
1) heat water in a stock pot, meanwhile, heat peanut oil in a wok over medium/low heat, stir fry ginger till fragrant
2) reduce heat to low, fry fish till both sizes are golden, turn heat to medium, sprinkle sake or wine in wok.
3) Put fish in the boiling water, add Chinese cabbage, bring to boil, reduce heat to medium low, simmer for 30 to 45 minutes, add salt to taste.
4) Fill the hot pot with fish stock, put some tofu cubes, sliced carrots and shitake mushroom (soften and pre-boiled), bring to boil, then you can start putting other ingredients in your hot pot.
