is chuck roast the same as regular hamburger??

Hamburger is scraps (not Bad) Chuck is one cut and I think it is best. I pick a chuck roast and have it ground coarse at the meat shop.

Ground chuck is very similar to 85/15 (85% lean/15% fat) hamburger depending on how the fat was trimmed. Ground chuck is more flavorful than regular HB. Ground chuck is made from both the 7-bone and arm-bone chuck cuts. The 7-bone cut is the area around what would be the clavicle bone in humans and gets its name from the shape of that bone when it is cut cross-wise. The arm-bone cut is lower on the fore leg and the bone is ring shaped. The chuck cuts may be included in regular HB, but is usually sold separately because ground chuck has a higher market price than regular HB.

Regular HB, in general, is made from the trimmings left over from the other cuts of meat plus the tougher pieces of meat on the lower limbs, but may include pieces of the rump area, the brisket and the flank. Sometimes HB is made from an entire bull or older cows because their meat is a bit stringy.

No, regular hamburger is made from the scrappy meat & fat added for weight, while the beef chuck parts are ground and sold as "ground chuck" which is leaner & more expensive that regular.
