It happens, pretty normal thing.
The key to this situation is selfconfidance & self trust.
The person sitting on the other side of table is just another human, I understand he is the one in power but he is doing his job & you do your job.
Play mock interviews in front of mirror.
What fears you the most when u think of an interview, figure it out & work on it.
When you are going out for an interview relax your mind take deep breaths & tell yourself I am just going to talk certain things about myself with someone.If they like me i'll be in their group or I 'll look for another, i got alot of options.
Chewing gum help, listining to mucis helps, sniffing chocolate/coffee beans when u feel nervous works.
eat a chocolate before your interview, & keep some to sniffe

Usually, to get over a fear of public speaking (being in an interview is like that, since you are 'presenting' yourself), just schedule as many interviews as you can. The more you interview, the better. Think to yourself that you will go on 40 interviews and count the times that you felt more relaxed. What were the circumstances? This will help you 'learn' how to interview calmly.
Another thing to do is relaxation exercises (in your car) before the interview. Consciously relax your body and do it every time you have an interview. Soon, you will be able to remind your body to relax during the interview. It is hard to be nervous when your body is relaxed.
It's natural to think that you relax your mind and your body will follow. But the most effective way to relax your mind is to relax your body first and then your mind automatically follows.

Be prepared for the interview, don't "wing it" and don't lie on your resume or on any questions that the interviewer asks you. By be prepared, that means you should know as much as possible about the company and the job you're interviewing for. Do your research before the interview. Ask intelligent questions at the interview.
If you're confident that you' re qualified and prepared for the interview, that should lessen your anxiety.
If you're still nervous, try this technique: imagine the interviewer sitting on the toilet taking a crap. It works. It worked for me and many other people. You may laugh and smile a bit, but you'll stop being so tense and it will make you more likable.

My daughter had the same thing happen, and she's stick thin! She just ate more food than even a 16 year-old with a tape worm could handle, when she got up from the table, went into the bathroom, and locked the door. I heard these awful sounds, sort of like retching, but I was only half paying attention, since the game was on. It's preseason, but still, you know. Anyway, I hollered over my shoulder, "Princess, you okay in there?" A half hour later, or maybe an hour, I dunno, she comes out and is white as a sheet and shaking all over. I couldn't help but notice her, since she was standing in front of the television. Anyway, it looked like she had even popped a few blood vessels in her eye, like she had been straining really hard. "Pumpkin", I said, "come over here and let me feel your forehead, you don't look so good. No, Pumpkin, move your caboose NOW, please." After she moved by my chair I felt her forehead, and it seemed like her whole head was throbbing! I asked her about it, and she said her heart was beating really, really fast. Well, the game was back on, so I told her to go into the kitchen and maybe take a laxative to calm her heart down, and I would check on her later. There's another game on tonight, so I guess maybe I'll check on her tomorrow, or maybe this weekend. Anyway, I wonder if her heart beating so fast burns up calories, so that's how she stays so thin? It's hard talking to her, though; teenagers, you know.

Try doing slow, deep breathing and biofeedback techniques. It helps if you are well prepared, so have a friend interview you until you know your stuff backwards and forwards. Do your homework about the company that your interviewing for, so you can answer questions intelligently.
Take some classes in public speaking and start going to Toastmasters.

If possible, schedule the interview later in the evening. Sometimes simply being in a "social mood" can help to relieve the stress a bit. I'm certainly more relaxed and talkative at the end of the day than early in the morning (I'm your typical socially deficient geek at 10 AM!)

Before I got my job that I have now, I was VERY nervous about the interview, probably just as nervous as you are. I decided the only thing that would calm me down was a shot of alcohol. I did a shot, brushed my teeth, chewed some gum, refreshed my perfume and got the job. I know that's probably not the answer for everyone but it worked for me.

It sounds like a classic case of anxiety. And with anxiety comes panic attacks, which sounds like what you are explaining. First off I want to say that you are not alone, many people suffer anxiety at one time or another, and being that way at a job interview is incredibly common. :)
If it is really that hard for you, you can talk to your doctor and he may give you some anti-anxiety medicine. They calm you down, and make you feel very relaxed, dull; almost blank, and if you want to be, focused.

Fortunately you are not the only one in this world with his problem. One core issue is confidence. The way to overcome is,
- do mocks. Call your friend and ask his DAD or anyone unknown to take a mock interview. You will understand the mistakes you are doing.
- get confident. Always believe you know yourself and your strengths best. So project those and speak up for yourself.
