We use the Pure Komachi set we bought off Amazon. We've had them for right at a year now, and are still very happy with them.
The handles are marked for the type of food to use each knife on, like the fish knife has fish bones down the handle, and the bread knife has little loaves. We also bought the tomato knife separately, and it is awesome.
$80 for the set of 4.

To meet your $75 range, believe it or not, IKEA. http://www.ikea.com.sg/products/category_display.asp?c0=6&c1=25&c2=27&id=0&ctype=1
Got my mom a set from there, and she's a little Italian lady who takes food seriously. She loves them.

Another good brand is called "Global," which you can find at most kitchen stores and department stores like Macy's. They don't cost as much as the top names, but wait for them to go on sale and you'll gt some quality knives for a good value.
