Some people say answer is 'no' as in can't guess the riddle but I think it's got to be pressure:.

Polar bears are white because the pressure at the poles is low, so they have to be able to absorb heat.

Pressure makes you cry if it's too much.

Pressure in your bladder makes you have to pee.

Peer pressure makes girls comb their hair...Otherwise we wouldn't bother!

Celebrities usually crack under pressure.

Many normal people will shine under pressure.

Pancakes turn brown thanks to pressure generated by the heat.

Champagne will bubble until the pressure of the carbonation has disappeared.

If you squeeze something under pressure, BAM, there it goes.

If you are 'looking' at pressure, you're in it, like in an airplane, and your ears pop.

I'm thinking time???

I turn polar bears white - Their coats are not always pure white.
and I will make you cry. - When someone gets old and dies. When events occur
I make guys have to pee - He can't wait forever.
and girls comb their hair. - They comb it because it gets long over time.
I make celebrities look stupid. - There is always propaganda and rumors as people become well known over time.
and normal people look like celebrities. - Events in their lives can be amazing over time. And when everyone old they basically look the same.

etc, etc.

And with the popping. Time goes by fast, especially when you try to hold on to it. If you watch it go by you eventually die (pop).

OR WATER
My guess is water, and here's why:
I turn polar bears white - They're white so that they blend in with the ice/snow
and I will make you cry. - Tears
I make guys have to pee - Self-explanatory
and girls comb their hair. - When they get it wet
I make celebrities look stupid - When they get drenched with water
and normal people look like celebrities. - Possibly, when they flip their hair back out of the water
I turn pancakes brown - As the batter dehydrates
and make your champagne bubble. - The carbonated water
If you squeeze me, I'll pop. - A water balloon
If you look at me, you'll pop. - Too deep into the ocean

I heard that the answer is supposed to be "no".

Technically, though, when looking at the question, which says:

"Can you guess the riddle?"

I find that yes, I can guess the riddle...that doesn't mean I'll get it right, though. Lol.
