hollandaise sauce is good, and will go with pilaf rice.

1 1/2 c. dry vermouth
1/4 c. chopped leek (white part only)
3 shallots or green onions, chopped
2 1/2 c. whipping cream

Combine first 3 ingredients in heavy medium saucepan. Boil until liquid is reduced to 3 tablespoons, stirring occasionally, about 20 minutes. Add cream and boil until sauce is reduced to 1 1/2 cups, about 15 minutes. Strain sauce. Season with salt and pepper. (Can be made 1 day ahead. Cover and chill.)

Sugar Seared Salmon with Sour Cream Sauce
20 min 5 min prep
Change to: servings US Metric
24 ounces salmon fillets
1/4 cup sugar
1 teaspoon salt
2 teaspoons chili powder
2 teaspoons ground coriander
1/4 cup unsalted butter
1/2 cup white wine
1/4 cup sour cream
1/4 cup chopped green onions

Salmon Main Dish
Mix the sugar with the salt, chili, and ground corriander.
Cut the salmon into 1" "fingers", and roll it in the sugar mixture to coat all sides.
Melt the butter over medium heat. When bubbly, add the salmon and cook until crusty on the outside and just cooked inside. (Only about 4 minutes per side).
Transfer the salmon to a plate. Add the wine to the pan and reduce slighly, then add the sour cream. Boil until the sauce thickens enough to coat a spoon. Make sure to scrape up all the brown bits from the pan.
Spoon the sauce over the salmon and sprinkle over the green onions.

I am so sick of salmon with dill!! Go for something different! Try a hollandaise (not as hard as you would think to make) or a bernaise (fancy hollandaise).

Hollandaise
1 egg yolk
1 tbsp lemon juice (or vinegar)
1/2 stick butter
salt and pepper

Heat egg yolk and lemon juice together on low heat so you don't cook the egg. Add butter when it is just combined and stir until the butter melts. Continue to stir until sauce has thickened. Add salt and pepper to taste.

(For 2 salmon filets)

Bernaise
1 egg yolk
1 tbsp white wine
1/2 stick butter
1 tbsp finely chopped terragon
salt and pepper

Heat egg yolk and wine together on low heat so you don't cook the egg. Add butter when it is just combined and stir until the butter melts. Continue to stir until sauce has thickened. Add terragon at last minute. Add salt and pepper to taste.

his is a great dill sauce for Salmon (Salmon and Dill ROCK):

1 1/2 c. dry vermouth
1/4 c. chopped leek (white part only)
3 shallots or green onions, chopped
2 1/2 c. whipping cream

Combine the leek, onions and vermouth and cook till translucent. Add whipping cream to thicken and base the sauce (on very low heat). If you want a little more tang or kcik to it, you have a couple of options:

1. Add a little lemon or lime to taste with the whipping cream

2. Use one cup of vermouth and 1/2 cup of Tequila (I personally like Orange Tecquilla with this sauce) to change it up.

Hollandaise sauce and maybe doctor it up a bit! You can go to the store and buy an instant hollandaise sauce for a few bucks!

its weird i looked through all the other answers and i didnt see one sinlge answer with tarragon in a hollandaise sauce.. CRAZY

anyways once you add tarragon to sauce hollandaise you have sauce Bearnaise (sp). its the ULTIMATE fish sause.. when made properly

ps NEVER EVER settle for a prepackaged hollandaise sauce because every single one of them if full of crap and tastes horribble to boot! you forked over the money for salmon dont ruin it will packaged junk!

edit to add: my apologies to the poster i did see a recipe for bearniase.. but nevertheless cue the rant on packaged hollandaise!

Mango Cream Sauce

Ingredients-
1 cup heavy cream
1 (15.25 ounce) can mango slices, with juice
1 (1.5 fluid ounce) jigger brandy
2 tablespoons brown sugar


Preparation-
In a medium saucepan over medium heat, blend heavy cream, mango juice, brandy, and brown sugar until thickened. Stir in mangoes, and bring to a boil over high heat. Continue to cook and stir about 1 minute. Serve warm.

I do not have a cream sauce but you can try this mix honey with OJ in a bowl (mix well) then put in on your salmon when the salmon is done. Stick it back in the over for 30 sec to 1min.
