MEATLOAF IN FRENCH BREAD
1 lb. ground beef
1/3 c. minced onion
1 egg
2 tsp. salt
1/2 tsp. oregano
1/2 tsp. nutmeg
1/8 tsp. pepper
Cut thin slice off entire length of French bread. Hollow out bread leaving 3/4 inch wall. Soak 2 cups of the bread in a full can of evaporated milk. Combine all of the above ingredients, adding the bread. Place mixture in the bread cavity. Put cut slice back on the bread. Wrap in aluminum foil and bake 1 1/2 hours at 350 degrees.
EASY MEXICAN RICE
1 tablespoon of vegetable oil
1 cup of long grain rice
2 1/2 cups cold water
2 tsp. salt
2 tsp. garlic salt or 1 tsp. garlic powder
3/4 cup of tomato sauce
In a skillet heat oil over medium heat. Add rice and cook until lightly browned. Add water and remaining ingredients, bring to a boil.
Cover and simmer until rice is tender.

BBQ Chicken and Black Bean Burritos
Dean’s Creation
• 1 (15 ounce) can black beans
• 1 tsp olive oil
• ½ tsp garlic powder
• ½ tsp coriander
• 12 ounces chicken (white or dark meat)
• 1 Medium onion, chopped
• 1 tablespoon olive oil
• 6 ounces BBQ sauce
• 8 ounces pepper Jack cheese, shredded, divided
• 6 10 inch flour tortillas
Drain and rinse beans. Heat beans with garlic and coriander in olive oil, set aside.
Boil or bake chicken (if not already cooked) until no longer pink, about 15 minutes. Let cool, then shred with fingers. Heat olive oil in sauté pan, add onion and cook approximately 5 minutes until translucent. Add Shredded chicken and BBQ sauce, stir fry until well blended.
Divide beans and chicken mixture evenly across 6 tortillas, top each with some of the cheese (use approx 4 ounces), and roll into burritos. Place in baking dish spray lightly with PAM (helps keep burritos from drying out).
Heat in 350 degree oven for 10 – 15 minutes, 20 minutes if refrigerated. Sprinkle remaining cheese on top and heat another 5 minutes.

I have a recipe for a Peanut Sauce Chicken. It is very easy and so delicious. Here you go.
Peanut Sauce Chicken
10 -12 skinless chicken thighs
1 bottle peanut sauce 350ml or 12oz I prefer President Choice (I believe you can only get this brand in Canada)
Olive oil
¾ salsa (I use a medium)
¼ cream (you can use half and half)
Juice of one lemon
Preheat oven to 350°
Heat a heavy deep skillet to medium high. Coat with olive oil. Brown chicken thighs on both sides. Pour in bottle of peanut sauce. Cover and bake in oven for about 45 minutes.
Remove pan from oven, place on a medium heat burner. Remove chicken. Add salsa, stir and let cook for a minute. Add cream blend in. Turn off heat add lemon and chicken.
Serve over basmati or jasmine rice. Your tummy will be happy.

CREOLE FRANKS
5 slices bacon, diced
1/2 c. onion, chopped
1 c. unsweetened pineapple juice
3/4 c. catsup
1/8 tsp. chili powder
1-1/2 lbs. frankfurters, sliced
1/4 c. green pepper, chopped
Cook the bacon in a large skillet, but do not crisp. Add onion and cook until tender. Add green peppers. Cook 2 minutes. Stir in pineapple juice, catsup and chili powder. Add frankfurters and simmer for 10 minutes. Serve over cooked white rice or mashed potatoes. Add a green salad, and crusty bread with butter to complete the meal.
CRUNCHY ONION CHICKEN
1-1/3 cups French’s French Fried Onions
1 lb. chicken
1 egg beaten
Crush the Fried Onions in a plastic bag. Dip the chicken into the egg, then coat in onion crumbs. Bake for 20 minutes at 400 F. until cooked through.
HUNGARIAN GOULASH
2-1/2 lb. beef, cut into chunks
1/2 garlic clove, crushed
1/2 c. onions, chopped
2 Tbsp. butter
2 C. water
1 C. catsup
1/2 tsp. dry mustard
1 Tbsp. paprika
2 Tbsp. brown sugar
1 Tbsp. salt
1 tsp. Worcestershire sauce
1 tsp. vinegar
1 tbsp. flour
8 oz. of noodles
Brown beef with onion and garlic in large skillet with butter. Add water, catsup, and seasonings, cover and cook at low heat until the meat is tender, about 2 hours. Mix flour with 1/4 c. of water and add to hot mixture, stirring constantly, and cook until thick. In the meantime cook noodles in boiling salted water. Drain, mix with part of the sauce from the meat, and serve with the meat over them.

I tried baking a cake without all the ingredients; Iit is not my own idea, it belongs to this young girl in college; used flavored coke---vanilla coke, cherry coke etc. and you can use either the regular stuff or diet. Simply follow the directions---oil the pan, heat the oven however, use the coke (flavored tastes better) and mix, put the mix in the pan and before you know it you have yourself cake that is good and semi-healthy for you, family, and friends. Try it and get back to me and tell me how it worked out.

A big hand clap for you. It is always good to know how to cook for yourself. The following is very easy. The most you will have to do is find the foods at the supermarket. Just ask a clerk where everything is. They will be happy to help.
The microwave and a crock pot are two things you will need. If you do not have them, you can pick them up at WalMart for a very good inexpensive price.
Hormel, Armour, Tyson and other brands have packages of PRE-COOKED beef tips, roast, pot roast, pork roast, chicken, ham, meatload. Most all come with gravy. They are very good and I serve them often. Use this for your meat dish and add vegetables, rice, or potatoes and gravy. You will find these packages near the meat section, they are not frozen.
Tyson's fully cooked whole chickens are delicious. I serve them often with S&W canned sweet potatoes, Stove-Top dressing-comes in a box-follow directions on the box, microwave chicken/turkey gravy-comes in a jar, a canned vegetable, canned cranberry sauce, and Pillsbury Microwave Biscuits which are better than I can make found in the freezer section-follow directions on the package. A frozen pie defrosted and fully cooked. Perfect for one or two people at Thanksgiving or Christmas.

Pasta Salad
Make elbow pasta, direction on the package. Once done rinse with cold water and strain. In the pasta, mix mayo, mustard, salt, pepper , veg all can, chopped ham and pickles if you like. Stir everything all together.

Mexican Stack
Fry some mince with onion, chopped capsicum, garlic, can of corn kernels and some taco sauce. Layer this mix alternately with tortillas or burrito wraps in a round oven proof dish. Sprinkle with grated cheese and bake until cheese is golden. (You can add any vegetables you like to this!)

Try marinating some chicken or salmon in soy sauce, fresh grated ginger & garlic. Keep in the fridge for about 2 hours and then cook. It's easy, flavorful, and delicious.
