Okay...I have NO cooking skills but need to prepare this dish for 17 people. Any tips? How many to cook, cooking process, etc.?

Sweet Potato Fluff

3 cups mashed cooked sweet potatoes (8-10 fresh or two large cans)
½ cup sugar
¼ cup melted butter
1 (5 oz.) can evaporated milk
¼ tsp. kosher salt
1 tsp. vanilla
Dash of each: cinnamon, nutmeg, dry orange peel

Topping:
½ cup brown sugar
½ cup chopped pecans
½ cup flour
2 Tbsp. butter

Preheat oven to 350ºF. Combine topping ingredients w/ a fork until crumbly; set aside.

Beat potatoes well with a mixer until fluffy. Stop and remove any strings from the beater at least twice. Stir in remaining ingredients and pour into a greased casserole dish. (for double recipe, us a 9"x13" pan)

Sprinkle topping on potatoes and bake for 40 minutes.

Serves 8.

Ok,,simple you want, well then simple it shall be....

Toss your sweet potatoes onto a foil lined pan. Toss in a 350* oven and bake until done, about a hour. (Same as you cook your baked pot, you can even use the microwave, like some do)

Remove from oven and as soon as they are cool enough to handle, peel the skin off..it should come off real easy. Now put them into a bowl, add butter, (use judgment, you want these to be just like mashed potatoes) and mash. Now spread mashed sweet potatoes into a baking dish. Heat at 350* until hot all the way through. Serve.

Now to fancy these ups:
Put some (about 1 cup)Pecan pieces in a skillet. Add a teaspoon butter, and 2 tablespoons sugar. Over medium heat, cook pecans in sugar until sugar melts. Using a spoon place these on top of mashed sweet potatoes.

OR

Toss some marshmallows on top of potatoes prior to putting in oven.

OR

Use orange juice with the butter when mashing.

Good Luck. Hope these gives you some ideas. Hey, you asked for simple...also the rule of thumb for sweet potatoes is that one potato will feed 2 people. So you should need 8 to 9 sweet potatoes. But if there is going to be a lot of different foods that everyone will be bringing, like a pot luck, then you can drop that down to 5 to 6 potatoes and that will give you plenty.

The following recipe is one of the first things I ever cooked for a Christmas family gathering.

SWEET POTATO SURPRISE

RECIPE INGREDIENTS:
Casserole
8 sweet potatoes, cooked**
2 cups sugar
2/3 cup margarine, melted
1 cup milk
4 eggs, beaten
2 teaspoon vanilla extract


Topping
2 cup pecans
2 cup brown sugar
2/3 cup all-purpose flour
2/3 cup margarine

1. Heat the oven to 375 degrees. In a large bowl, mix the sweet potatoes, sugar, margarine, milk, eggs, and vanilla extract until well combined. (using a mixer works the best) Transfer the mixture into a 2 1/2-quart baking dish.

2. In a separate bowl, combine the topping ingredients with a pastry cutter or your fingertips until crumbly. Distribute the topping over the sweet potatoes. Then bake the casserole for 20 minutes or until lightly browned. Serves 12 to 16.

**To cook the sweet potatoes, put them in a large pot of water and boil them until they are soft. Then peal the skins off (which should be relatively easy). Next, mash them.

Okay. In NZ terms that is kumara, I love LOVE these two kumara (sweet potato) recipes...

KUMARA & ORANGE:

2 medium kumara chopped (not too small, into decent sized pieces)
2 tablespoons brown sugar
1 tablespoon butter
1 teaspoon grated orange rind
1/4 cup orange juice
1 tablespoon chopped chives (also known as spring onions sometimes but not the big shallots, the small fine bunches). You could use dried if you wished but fresh would be nicest.

Cook kumara in boiling salted water till tender. Drain well. Add brown sugar, butter, oranged rind and juice to the kumara. Return saucepan to heat. Bring to the boil. Reduce heat. Continue cooking till orange mixture thickens and kumara is glazed. Garnish with chives.

This serves 6 so I would triple this recipe at least.



How about a soup? This is YUMMY and a nice entree.

KUMARA SOUP
25g butter
1 large kumara chopped
1 small onion chopped real fine
1 large potato chopped
1 1/2 teaspoons curry powder
3 cups chicken stock
1 cup milk
salt
chopped chives (again fresh or dried will do, but fresh will be nicest).

Melt butter in saucepan. Add kumara, onion, potato and curry powder. Cook till onion is clear. Stir in stock and bring to boil, simmer gently until veges are tender. Puree in food processor or blender till smooth. Add the milk and salt. Reheat till almost boiling and serve garnished with chives.

This serves 6-8 so I would at least double or even triple.

If you want to make something slightly different than the usual "sweet potatoes with butter, brown sugar, & cinnamon with marshmallows on top," Try these:

Roasted Sweet Potatoes

Cube fresh Sweet Potatoes in 1/2 to 3/4 inch cubes
Season with Salt, Pepper, & Rosemary
Drizzle with Olive Oil (& Balsamic Vinegar if desired)
Put on foil-lined rimmed cookie sheet (aka: jelly roll pan)
Cover tightly with foil and roast in 425 degree oven until tender (depending upon size of cubes, ~20 - 35 minutes)
Shake pan several times while cooking
Remove foil and broil until browned as desired
Serve
Enjoy

I guess about 10 large sweet potatoes, peeled, cut in 1 inch squares and boiled. Add a cup of brown sugar, and a stick and a half of butter.
