Simple, it's called "mannerism."
They've been doing it for a long time, they don't even know how to stop it.

I live in the US and I talk with my hands all the time. ( to some people I guess that makes me rude??) I have done it my whole life. My Mother used to tell me to slow down. Yes I have accidently bumped something or someone. I have a deaf family member so talking with the hands is a must when you have to use sign language. But even in every day talking I still use my hands. I can't help it.

Some people are shy and dont know how to move their hands or are very shy about doing so.While others just are comfortable and used to talking and moving their hands

I do this all the time. I can't speak for others, but I started doing it out of necessity when communicating with my father and grandmother. I continue to do it with everyone I'm speaking to out of habit.

My father has brain damage due to a head injury and his attention will wander if he doesn't have anything to focus his eyes on. If I move my hands while I speak, I keep his attention. (Forget phone conversations with him, though. I'm lucky if I can talk to him for more than 60 seconds on the telephone.) My grandmother is partially deaf and I have learned that if I don't gesture while I'm speaking, she won't realize I'm talking or try to read my lips.

For others, moving the hands during speech may help them to focus their own thoughts. Or it may be a nervous habit. Perhaps, like me, they have loved ones who rely on sight a little more than sound.

It's little more than a learned habit. It's also considered rude in much of the US, just to tell you, to talk with your hands. I find it annoying, and even got hit in the face once by someone who did that--accidentally of course.

It is just gestures and body language. Some folks can't hold still when they talk.

Their brains work differently. In their minds their words come out better when they visualize and gesture what they want to say.

It's just another way of expressing themselves i guess. Hehehe. I only do that when I'm angry. Most of the time I don't.
