I've tried this recipe and it's fantastic! Very moist! It just seems to missing something. I was thinking of maybe adding some italian seasoning to the mix. Any other suggestions??

1 tablespoon butter
1/4 cup minced onion
2 cloves garlic, minced
1 1/2 teaspoons salt
1 1/2 teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 1/2 tablespoons sour cream
1 1/2 tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
1/4 cup milk
3 tablespoons ketchup

Instead of the tomato sauce add some pasta sauce. Ragu or Prego. That could help.

I recently made my first attempt at a meatloaf and this is what I did. Four out of the five people in my house loved it and we had very little leftovers. My only recommendation is doubling the sauce and only pouring half of it over the meatloaf before baking. Then you can heat up the other half and people can use it if they would like (my husband is a sauce lover) 1 1/2 lbs lean ground beef 1 cup cracker crumbs crushed 1 packet of Lipton onion soup mix 1 egg 1 1/2 teaspoon salt 1/4 teaspoon lemon pepper 6 tablespoon ketchup 1/2 cup of milk mix and make a log . put on cooking tray ( I use a 13x9 pyrex dish) Sauce for the top 4 tablespoon brown sugar 2 tablespoon worcestershire sauce 1/2 cup ketchup pour over meatloaf cover and bake at 350 for 1 hour.

OMG, bump up the onions and garlic! Add some celery! Maybe 1 cup of onion, and 2 stalks of celery, 3 cloves of garlic.

Add some worcestershire sauce (1 Tbsp)

ditch the sour cream. Never heard of that in meatloaf.

Add about ½ cup chopped fresh flat-leaf parsely.

Make a sauce for the top using ½ cup ketchup, ¼ cup brown sugar and ¼ cup yellow mustard. Mix well, spread on top, bake.

I would suggest adding diced celery , just a rib or two, to the pan when you saute your onion and garlic. A diced carrot or some bell pepper could also be added the same way. Just keep the vegetables diced very small. I am a big fan of using lots of chopped fresh parsley in meatloaf. Your recipe calls for very little in the way of herbs or other strong flavors. You could add 3 TB of BBQ sauce or any dried herbs that apeal to you. Your italian seasonings would be a fine addition.

Add about 3 tablespoons of Dijon Mustard and only use 2 tablespoons of sour cream.

My mom puts a hard boiled egg in the middle so when you get a slice you get egg. It's really good.
On my next meatloaf I want to try to put green onion or leeks. Celery is good. Mushrooms always a hit.
Wolfgang Puck had a meatloaf recipe on Yahoo Food and he added cream. It sounded delish.

Use Ground chuck instead of extra lean beef Add Rotel tomato's and chili's instead of tomato sauce.

Bacon
A couple of strips over the top during cooking make it so nice. I like to put a couple of pablono chilies in mine. They are not spicey but add a nice flavor.
