CHEESE OMELETTE
5 slices thick bacon
4 potatoes, boiled
1 onion, chopped
4 eggs
4 tbsp. milk
2 tomatoes, sliced
2 oz. Swiss cheese, grated
1 tbsp. parsley
Salt & pepper to taste (doesn't need much)
Chop onion and cut potatoes into small cubes. Brown bacon, potatoes and onion in skillet. Beat eggs with milk, salt and pepper; pour over ingredients in the skillet. Make sure eggs are evenly distributed.
Put sliced tomatoes on top and sprinkle with cheese. Cook until omelette is creamy on top about 10 minutes. Sprinkle with parsley.
OMELET
6 eggs, beaten separately
1 cup of milk
1 tablespoon of butter, melted
Mix milk, yolks, butter, salt and pepper, and add the whites last. Pour into a hot pan which has been well buttered, and cook quickly on top of oven. When it begins to thicken, put inside the oven and brown.
Fold in half and roll and serve hot at once. Omelets should be served immediately.
Variation: Add 1/2 cup chopped ham, bell peppers, onions to the skillet and saute over high heat in 1/2 tablespoon additional butter, until cooked. Gather these ingredients into the center of the pan with your spatula and spread evenly. Proceed as above, pouring the egg batter over the additions. Also known as a Western Omelet!

If you want to make a really simple omelet, all you need is the egg and some butter. Melt the butter in the pan. Whip up the eggs until they are frothy. When the butter is melted and hot, pour in the eggs all at once. Let sit for a minute and then with a spoon or spatula, start from the outside and drag the egg into the middle as you tip the pan. The object is to let the liquid part get under the part that is trying to make a solid layer. Once you have lifted the edges and allowed all that will run under, put your skillet under the broiler and cook just until the surface is dry. Place your filling (whatever you want) on half the egg and fold the other half over it. Place a slice of cheese on top of the egg and allow it to melt. Transfer from the skillet to a plate and you are ready to eat.Things you can use for the filling are:
sauteed onions
cooked ground sausage
kielbasa sausage - cut into small pieces
sauteed green bell pepper
diced ham
shredded cheese (cheddar, cojack, whatever you like)
chopped steamed spinach
left over chili
crumbled bacon
leftover steak
See, there is a world of things you can put into your omelet.
I like my omelet more like a one-piece scramble. In the restaurant only the filling has the flavor. I like it all stirred together so all of it has the flavor. So I cook the filling in a skillet and dump the egg on top of it, stirring it to mix together, and then doing the edge thing to allow the liquid part to the bottom. I put it under the broiler, fold it over, place the piece of cheese on top and when melted, transfer it to the plate. You can put the shredded cheese in it also as well as on top.

BAKED ENGLISH OMELETTE
6 eggs
2/3 c. milk
1/4 tsp. salt
1/8 tsp. black pepper
1 1/2 c. shredded Cheddar cheese
1 green onion, thinly sliced
3 slices bacon, cooked & crumbled
1 tbsp. butter
1 tbsp. Parmesan cheese
Beat eggs with wire whisk until smooth. Beat in milk. Stir in seasonings, cheese, onion and bacon. Melt butter in a 9 inch frying pan or omelette pan.
Pour egg mixture into pan. Sprinkle with Parmesan cheese. Bake at 400 degrees for 20 minutes or until set and golden. Garnish with additional bacon if desired. Serve immediately.

BAKED OMELETTES
6 eggs
Separate yolks and whites and set egg whites aside. Into the yolks, stir 2 tablespoons flour and a dash of salt. Add 1 cup milk; stir until smooth. Divide into three equal parts.
Beat whites very stiff and divide among egg yolk dishes. Add a little melted butter to each dish and stir. Butter the pans; pour in batter and bake at 325 degrees. Watch carefully.
Loosen sides of omelette with spatula and fold in half. Tip out onto a hot platter. If you desire only one omelette, reduce by one third, but use 1 teaspoon flour.
For variation, use crumbled crisp fried bacon or Parmesan cheese to the top of each omelette before cooking.
