Instant rice has the outer part removed and is partially cooked and dried. That's why it doesn't take as long to cook. Normal rice is raw rice.

Instant rice doesn't have much flavor, but it's a very useful thing to have. Julia Child said it was great for emergencies, and for times when the flavor of the rice itself really didn't matter.

Rli is correct, but she left out the lack of flavor from instant rice or even normal rice. Long grain and wild rice are the way to go!
