Cut the top off a whole head of garlic. Drizzle with olive oil and roast it in the oven until soft. Remove the cloves and mash with a little salt. Mix it into the potatoes and add a little cream or milk.

Butter Buds or Molly McButter. They're sold in the spice section and add butter flavor without adding fat and calories. My daughter has high cholesterol and I use this on any moist hot food (including popcorn, potatoes, vegetables, almost anything!)

Add a little bit more milk than usual, then add in some powdered butter flavoring. Most grocery stores carry it! Usually it is for putting on popcorn or the like, but I think it would work wonderfully for this!

Cook them in chicken stock gives them a wonderful flavor without butter. Just add plenty of salt and pepper and a little cream.

hi if your mum is allergic to dairy products but likes the taste ,try VITALITE it is dairy free also high in poly unsaturates and low in cholesterol,prices vary but range from about 78p to 86p you can get in in most supermarkets,i use it all the time it tastes great,on toast in your mash or swede anywhere really that you would use butter or margarine. i hope this helps .it is also suitable for baking.

- use Popcorn Salt - it has butter flavouring in it! Works a charm with a touch of skim milk or soy milk!
