The best camera is the one that creates the images that you want. With that said, each camera is capable of making the same images.... how you have to set your camera to get their might be a little different from one to the other.
Personally, I prefer Nikon. Before I started my SLR system I was going back and forth and the Nikon system just made more sense to me. The settings I used and changed constantly were all at my fingertips and in the Canons I was looking at they were all burried in menus. Its been several years since then so it could be very different these days, but I just love how my Nikons get out of my way to allow me to make great images.
You really can't go wrong with either, but just like others will say.... figure your budget... go to a camera store (not a best buy, circuit city, etc.) and handle both. Spend some time familiarizing yourself with each system, where the settings are, etc. and from this figure which will be best for your purposes. I also recommend picking the brains of the staff. If it's a really good shop they won't try to sell you more camera than you need. Also.... read, read, read and when you think you've read enough, read some more.
Good luck!

Just because a company sells a lot of cameras it may not be the best for you. So besides Canon and Nikon consider Fuji, Sony and Panasonic. I own 2 point & shoots. One is Sony, the other is a Fuji; but I know why I bought each of those cameras. If you think you might be going into the higher end of say $400 or more, add a bit more to it and consider buying a digital SLR. Then you're sensible choice would be a Nikon or Canon.

I can tell you what my favorites are, but how is that going to help you make your decision? Choosing a camera should not be done via a popularity contest. I'd pick one based on which will do what you need it to do and if it feels right and all the controls are where you need them to be. I'd stick with Nikon, Canon or Pentax digital SLRs if that is the type of camera you are looking. My favorites are Nikon cameras, N90s for film and D50 for digital.
