Give her a cooking course as a gift if she likes to cook
There might also be courses you could take together with her.
Depending on your age cook yourself and try out new dishes. She might just like them and get interested.

I am a mom of two teenagers. I enjoy it when my family suggests or requests a specific meal, rather than having me guess what they would like. I also enjoy it when one of them (usually my daughter) keeps me company in the kitchen, doing some of the prep work, like chopping the vegetables. In fact, my daughter (14) has become a great cook and often prepares meals for the family. For Christmas, maybe you could get your mom a cookbook, specializing in fewer ingredients or "meals in minutes", then go through it together, marking recipes that would interest both of you. Have fun!

My mom was the same way. Then she started to cook and it was awful. Watch what you wish for. Because then you have to eat the crap she cooks.

Guess you get to cook then.
Ask her to sometime if she hasnt in a while and tell her you miss her cooking.

I would ask her to show me how to make certain things and flatter her about how good they are. Also talk to her about taking turns cooking. Our rule is if you cook you don't clean. That is a good break that most people go for.
