You will be fine with one boxed cake mix. I make and sell cakes for birthdays etc. I cut the rise off of the cakes before I stack them, and because I sell them, I want them to be a hearty sized cake. I use 1 1/2 mixes for an 8" round layer cake. However, for just a family home made cake, the one mix will be fine. After all, that is what the box says it will make. Enjoy your cake!

If you're making an 8 or 9 inch round cake, you only need one box for a two-layer cake. It's easy, and it's really quite good from a box.
