I have one LARGE chicken breast , looking for a fast , easy recipe for tonight , making it with sweet pototo.

this is great fast cheap and simple... one chicken breast and one can of cream of mushroom soup and one bag of instant rice..... delicous.through together and simmer till chicken is done.

Fastest would be to season the chicken well, grill it, and serve it sliced over a green salad. That and the sweet potato ought to make a nice quick meal.
Alternatively, if you have a little more time, you could cook some stout pasta like a rigatoni. Then cut your chicken and saute it with some olive oil, onion, garlic and salt and pepper. Add some herbs if you like. Once the chicken is cooked through, add the pasta and toss in the oil and chicken mixture getting a nice coating on the pasta. At the very end, add some diced tomatoes so they get hot but not really cooked. It's a meal in a pan.

Pound the breast until it is flat and the same thickness all the way across. Sprinkle with black pepper, a little salt if desired, and sprinkle it with a little flour to coat. Brown on both sides in a little oil, place in a 350º oven for 15 minutes.

That makes a Weiner Schnitzel. Serve with a little Milk gravy that has lots of black pepper in it. Should go good with your sweet potato.

Grilled w/ BBQ sauce, you can grill the sweet potato also just cut it in half and drizzle it with olive oil and grill flesh side down.

*********CHICKEN BREAST WITH LEMON
4 boneless chicken breasts
Flour for coating
Salt and pepper
1 tbsp. oil
5 tbsp. butter
2 tbsp. lemon juice
3 tbsp. chicken broth or stock
3 tbsp. chopped parsley
Cut chicken breast into 2 slices (horizontally). Season flour with salt and pepper, then coat chicken. Heat oil and 3 tablespoons butter in large skillet. Add chicken and sauté 5-6 minutes on each side or until tender (medium-low heat). Place on a warmed serving platter and keep hot. Add lemon juice and stock to pan juices. Bring to boil. Boil 1 minute. Add parsley and remaining 2 tablespoons butter. Stir until blended. Pour over chicken.

******Ranch Chicken Breasts Recipes

1/2 cup ranch salad dressing
1 tablespoon flour
4 boneless skinless chicken breast halves
1/4 cup shredded sharp cheddar cheese
1/4 cup grated parmesan cheese


Combine dressing with flour in a shallow bowl. Coat each chicken breast with dressing mixture. Place on ungreased baking pan. Combine Cheddar and Parmesan cheeses; sprinkle on chicken. Bake at 375°F. for 25 minutes or until chicken is no longer pink in center and juices run clear.
