Mostly Greek, there are some sources that cite Matthew being written first in Hebrew. There are some Aramaic phrases and other Semitic idioms sprinkled in for flavor.
The Gospels are officially anonymous. However Luke is part of a two volume set with Acts. There are strong internal and external reasons for the attribution to Matthew (Levi the Apostle), Mark (John Mark), Luke (traveling companion of Paul) and John (The Apostle).
edit-- Wow you are ignorant of history. Did you know that Greek was the official business language of the Roman empire? Did you know that the Seleucids and Ptolemies had a very Hellenistic influence on Palestine?
Matthew as a Roman tax collector would have been quite good in Greek. If you read his Greek he was.
Paul was a Jew who was born a Roman citizen in a city of very mixed cultures. Highly educated.
There is even strong evidence that Jesus spoke Greek as well. All business was conducted in Greek by Roman law. So people in a carpentry or fishing business would have had to be functional in Greek to do business.
There is so much more but this is just off the top of my head. You could not be more misinformed if you tried.
I nearly forgot, Luke was Greek by birth... He was the author of Luke and Acts.
There is very strong attestation of said facts as early as the very early 2nd century.

Greek was the common written language of the day. The Gospels were believed to be written by Matthew, Mark, Luke and John. If Matthew wrote his, he was a tax collector, and fully capable of writing Greek. Mark received his gospel from Peter, so he was able to write as well. Luke was a physician by trade and also most likely able to write in Greek as well, considering his gospel and the book of Acts were written to a Gentile. There is no indication that John dictated his books to anyone.
You are still without excuse.

Just an FYI, I am a pagan that really loves the history and that believes that Jesus was a man that lived. He and many others have excellent lessons that we can all learn from.

Greek. Matthew, Mark, Luke and John each wrote their own account of Jesus' life and ministry on Earth.

You are wrong saying none could write..Paul did use a scribe when his eyes were "failing"..read the Bible before you criticize it
Philemon 1:19
I, Paul have written it with mine own hand, I will repay it: albeit I do not say to thee how thou owest unto me even thine own self besides.

Aramaic and Greek.
You realize that Matthew was a tax collector and Luke was a doctor right? They could write and had been trained to do so.
