You need to address your concerns and offer any proof you have to the county health department where the restaurant is located. They will want to know how you came to have this knowledge. I assume if you work there yourself, your job is at stake, because no manager will keep an employee solely responsible for the loss of income while the place is closed until it's brought up to code. If you know this because you work there, stress to the county that you want anonymity.
However, contacting someone with the authority to do something about it is definitely the right thing to do. Some people who are already in fragile health could die from a new infection.

First of all, you need to calm down, it's not a health threat. Everybody carries staph on their skin! Just because someone gets a staph infection doesn't mean they "caught it". You get it from yourself, due to several factors, one of them is excessive exercise & sweat, and if your immune system is low, the bacteria on your skin will turn into a sore & infection. You cannot "catch staph" from someone through the air or casual contact. You would have to touch their sore & you in turn would have to have done this with a cut on your body. Or come into contact with sweaty body. Geez...this is not a health scare. And it's very very treatable. You can use a topical bacterium ointment in most cases. Also most cases appear in the trunk of the body, stomach, upper leg etc. And not on the hand or somewhere that would come into contact with food. And if they are aware they have an infection, they take or use bacterium & cover with a bandaid. As long as they wash their hands and are clean.

To my understanding Perkins is located inside of a Holiday Inn? Why not talk to the staff of Holiday Inn about the issue?
I recommend calling your Cities health & safety representatives.

call your local health dept. Should be in phone book under County listings - or find their website - report it. Or, call local tv news station & tell them.
