I am going to make a huge 5 pound meatloaf tonight. Three pounds of hamburger, 2 pounds of spicy and regular sausage.
How many eggs, crackers, onion, ketcup should I use?
Anyone have a good recipe?

I'd think about 3-4 eggs and just keep adding bread crumbs till it gets to the consistency you want. you might want to put it in a couple meatloaf pans to cook better or just one rectangle cake type pan. I like to add pkgs of onion soup mix to mine. my step mom makes the best meat loaf using a cake pan sized meatloaf, cook it till its done then spread a layer of tomato paste on top add mashed potatoes to the top of that and top with american cheese and bake till the cheese is melty! yummmm

When I make a 1 pound meatloaf, I use 1 egg, about 10 crackers - crushed (or bread crumbs - about 1/4 cup), 1/2 medium onion, diced. I pour the catsup over the top and spread it to cover. I don't put a really thick layer of it on top but enough so you can't see the meat through it.

For your 5 lbs of meat, I would start with 3 eggs, squish the eggs into the meat to see how wet it looks. If it doesn't hold together (too dry), add another egg. You want it nice and sticky. Then you add the crumbs to thicken it a little and hold it together. That's how I generally do it. I don't actually measure anything, just add until it looks right. The only seasoning I add to mine is black pepper. You can also add bell peppers - diced - to your meat loaf. That is good too but generally I skip that.

It's going to take some time for your meatloaf to cook, depending on the depth of your pan. Remember the outside will cook faster than the inside. And the longer it takes to cook, the darker your catsup over the top will get so you might have to place a piece of foil over the top to keep the catsup from burning.

I make a three pound meatloaf recipe in a 3qt rectangular casserole dish. It takes one hour and 15 minutes at 350, covered. If you have a 5qt casserole, I believe it would still take the same amount of time, since it would not be any thicker than what I make. Remember to let it sit about 10 minutes after its done outside the oven before you serve it. This allows the juices to distribute evenly.

6 eggs, 1/2-1lb breadcrumbs 2 medium onions. I keep the ketchup on the side.
