What does the statue symbolize? Who was this priest? Whose skull was it?

Why didn't you ask while you were there?
Italy has that catacomb thing going, they have kind of a weird relationship with the dead. I dunno. If its in a catholic church it should be a saint...?

St Francis of Assisi is often depicted with a skull.

Skulls were often used as "mementos of mortality" and reminder of the need for repentance of sin by mortals before it was too late.
