I have to feed 8 college boys tonight. I have 9 chicken breast. Last night they had breaded spinach chicken so something different from that. Also these are good ol midwestern meat and potato boys so nothing too fancy. Any help is greatly appreciated!

Just slather & marinate the chicken breasts w/ onion slices in BBQ sauce, place them in a baking dish, cover it with foil and bake until done. Side dishes are easy with this entree: Coleslaw, baked potatoes or fried potato wedges, dinner rolls, baked beans, buttered corn. College boys are all Cowboys anyways...no matter where they are from!!!

Here's a recipe I use when camping. But it can be used in the kitchen to. It's real easy and filling! I don't know how much these guys eat so you may want to double the recipe or go 1 1/2 times.

Chicken or Pork Tortilla Casserole
David Herzog

4 chicken breasts cooked and shredded or 1 lb. cooked and cubed pork
½ pound tortilla chips
1 pound cheddar cheese, grated, add some pepper jack cheese
2 Ortega chilies, diced

Mix together:
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup milk or sour cream
1 large chopped onion
1 7 oz can green chili salsa

Grease a 12 inch Dutch oven. Crumble half of the chips into bottom; then layer of chicken, a layer of soup mixture, a layer of cheese. Repeat layers, ending with cheese.
Bake at 300° for 1 ½ hours Serves 8

How about chicken parm? Bread the chicken in italian flavored bread crumbs, you can fry the breasts or bake them. When they are cooked melt mozzarella cheese on the chicken. In the meantime, make a couple boxes of pasta and some sauce. Top if off with some garlic bread and you will have 8 full college boys.

If you want, you can put sauce on the chix, then melt the cheese over it, but some people like more sauce than others, so I usually add the sauce afterwards.

Oven Fried Chicken II
"I love fried chicken. I came up with this one, and have been making it ever since! Everyone I have given the recipe to has loved it as well."


Original recipe yield:
4 servings
INGREDIENTS
• 12 chicken thighs
• 3 eggs
• 1 cup all-purpose flour
• 1 cup Italian seasoned bread crumbs
• salt and pepper to taste
• 1 teaspoon paprika
• 1/2 cup vegetable oil
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. Place flour in a shallow plate or bowl and season with salt and pepper to taste. Put the bread crumbs in another shallow plate or bowl and beat the eggs in another bowl.
3. Dredge the chicken piece by piece in the flour, then the egg, then the bread crumbs, until all pieces are coated. Pour the oil into a 9x13 inch baking dish. Add the chicken to the dish and sprinkle with paprika to taste. Bake in the preheated oven for 30 minutes, then turn pieces over and bake for another 30 minutes. Remove from oven and drain on paper towels. Enjoy!

8 boneless, skinless chicken breast halves
3 tablespoons brown sugar
1 tablespoon ground paprika
1 teaspoon salt
1 teaspoon dry mustard
1/2 teaspoon chili powder
1/4 cup distilled white vinegar
1/8 teaspoon cayenne pepper
2 tablespoons Worcestershire sauce
1 1/2 cups tomato-vegetable juice cocktail
1/2 cup ketchup
1/4 cup water
2 cloves garlic, minced


DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
Place the chicken breasts in a single layer in a 9x13 inch baking dish. In a medium bowl, mix together the brown sugar, paprika, salt, dry mustard, chili powder, vinegar, cayenne pepper, Worcestershire sauce, vegetable juice cocktail, ketchup, water and garlic. Pour the sauce evenly over the chicken breasts.
Bake uncovered, for 35 minutes in the preheated oven. Remove chicken breasts, shred with a fork, and return to the sauce. Bake in the oven for an additional 10 minutes so the chicken can soak up more flavor. Serve on a bed of rice with freshly ground black pepper.

I would go with a variation on Shepard's pie. Cook the breasts, then chop them up, make a big ol pot of mashers, layer the potato's with the chicken. You can also add whatever you got laying around....corn, carrots, peas. To kick it up a bit.....add a can of cream of "whatever" soup to the middle layer (may have to thin it out with some milk) bake in the oven covered for 30 minutes, layer on some cheddar cheese and cook uncovered until the cheese is oozing a nd bubbly.....the boys will be stuffted.

Too bad you can't put the chickens in the freezer and fix for them a big pot of chili - college kids love that. And you can make the chili in 40 minutes!!

Here's the quick way in case you have the opportunity to feed them again.

canned kidney beans - drained
canned tomato sauce
package(s) of Chili Mix
ground beef - cooked and drained
mushrooms - sliced or canned (drained)

Bring the whole thing to a boil, turn the heat down and simmer 40 minutes. Serve over rice.

For the college boys I would do 6 cans of kidney beans, 4 cans of tomato sauce, 2 pkgs of Chili mix, 3 lbs of ground beef and 2 cans of mushrooms.

You could chunk the chicken and put it in the chili in place of the ground beef but it wouldn't be as good.

My 6'4" brother, when he was in college, could inhale that chili. My mom served it with a side-salad.

This is my knock-off of Stauffer's Scalloped Chicken and Noodles. If you use a large pot, you can cook the whole meal in the one large pot and you will think yourself brilliant for not only feeding a crowd, but only dirtying one pot in the process.

Salt the water well, and boil the chicken breasts and shred them or cube them. Remove them, and in the same water (add more if you need it), boil 24 ounces or about 4 boxes of linguini or spaghetti, and drain it and set it aside.

In the same empty pot you just took the noodles out of, empty 4 cans of cream of mushroom soup, 4 cans of drained portabello mushroom pieces, 4 cans of water, the shredded chicken mixing well, and bring to a boil. Add 1 tsp each of onion powder, and garlic powder. Add 1 Tablespoon of italian seasoning, and a healthy pinch of crushed rosemary. When everything has simmered for 5 minutes, add 2 cups of sour cream, and two cups of shredded italian 4-cheese blend. Stir until smooth, salt and pepper to taste, then stir in the noodles. The sauce will thicken as it cools. Top with grated parmesan cheese.

You may want to purchase another package of chicken. maybe Legs ?
Just bake them since they had breaded last night.
Make up a pot of mashed potatoes ,lots of broccoli ,and a huge fruit salad.You can also add rolls if you think you will need it.
If you want a separate dessert, go to the market and pick up something pre-made.You have enough to do already.
Make sure you have milk, soda and water available.
Young adult boys eat like there is no tomorrow.

How about chicken quesadillas w/ rice and beans. Or a hearty chicken casserole. Chicken and dumplings are always good.
