Are there any options where the cheese melts, but the texture is a little tough and crunchy as it hardens?

just kidding... try mixing in a hard cheese with your mozzarella. It will make the cheese a little "stiffer" and cut down the cost of the mozzarella.
some firm cheeses that would be tasty mixed with mozzarella:
Parmesan
Provolone
Romano
Aged cheddar
Dry jack
Not sure which cheeses would be most readily available and least expensive in Russia... Good luck and Buono Appetite !

I like a mix of provolone and asiago but you probably can't get those in Russia. I've actually found that Swiss cheese is good on pizza, especially if you bake it til it gets a little bit brown on top -- gives it a crunchy, nutty taste. Try it with tomato sauce, ham or sausage and pineapple (really!).
In fact, one very good pizza is to cover the crust with chopped ham, chopped onions, chopped brocolli and lots of shredded Swiss cheese (no tomato sauce). Very tasty

I know it's a little wierd but I like white american cheese it has a different taste i have tried it on my pizza it was good and it stays soft

I'd stick to mozzarella. You're right, It's a bit expensive but I like it. It's soooo yummy !!!

i like to use monterrey jack cheese! or there's jalepeno jack if you're into spicy!! :) but really any of the Jack cheeses will do!
