This is a recipe handed down to me by my grandmother. When my mother was growing up (she 84 now), her mother would make this recipe and keep it in the refrigerator. When they had their holiday company, she would heat a pot of milk, place it in a pitcher, and have the company (or children) scoop one rounded tablespoon of the chocolate mixture into a cup and pour the hot milk over it. Then you just stir it well. This recipe makes 8-10 servings (1 tablespoon each)
FRENCH CHOCOLATE
2 1/2 squares unsweetened chocolate
1/2 c whipping cream
pinch salt
3/4 c sugar
1/2 c cold water
6 c hot milk
Combine chocolate and water and cook over direct heat. Add the salt and sugar and cook 4 minutes longer, stirring constantly. Cool. Fold in whipped cream. Will be stiff.
To serve: Place chocolate in a bowl and place the hot milk in a pitcher. Put one rounded tablespoon chocolate misture in a cup and pour hot milk over it. Stir well. Serves 8-10.

This one is a Rachael Ray recipe:
4 cups whole milk
1/2 cup water
1/2 cup sugar
6 oz bittersweet chocolate, chopped
2 oz butterscotch chips
1 canister whipped cream
1 toffee bar, crushed (like Heath bars)
Heat milk, water, sugar to a boil, remove from heat and stir in chocolate and butterscotch chips until they melt into milk. Pour into small mugs or cups and top with whipped cream swirls and crushed toffee.
Personal note - I would wait a few minutes and let the hot chocolate cool a bit before adding the whipped cream and toffee, otherwise they melt pretty quick. My family loves this recipe around the holidays.

I make my own instant cocoa. I just made it a couple of days ago so the recipe is still fresh in my memory.
5 1/2 cups of powdered milk
1 1/2 cups of powdered coffee creamer
2 cups of cocoa powder
2 cups of sugar
This mixture tastes just like purchased hot chocolate and you can make as much or as little as you like.

Two teaspoons of cocoa, one of sugar. A little hot water to melt it all, then add milk. Heat if you want it hotter. Tastes great cold too.
